Since being in hospital and on the meal plan, I have had to have a light dessert every night. This could be jelly and ice cream, a yogurt, custard or a pot of rice pudding. I made a vow when I came in here that I would try to challenge myself.

Something I loved before my eating disorder took hold, was rice pudding. I have wanted to be able to enjoy it again for so long. Taking hold of that pot for the first time was terrifying. Yet, it made me realise just how much I enjoyed it and now I have it mostly every night.

This week’s Sunday Bake is a classic take on a homemade one. I wish I could go home and make some myself. For now, though, I will be enjoying my little pot, whilst I hope you all get stuck into this delicious recipe:

Ingredients

• 100g Pudding Rice
• 50g Sugar
• 700ml Semi-Skimmed Milk
• Pinch Grated Nutmeg
• Small Amount of Butter for Greasing

Tools

• 850ml Heatproof Baking Dish
• Wooden Spoon
• Sieve
• Medium Sized Bowl

Method

1. Preheat your oven to 150C/fan 130C/gas 2. Butter the heatproof baking dish and leave to one side.
2. Using the bowl, wash the rice. Use the sieve to drain well. 
3. Place the rice and sugar into the bowl and stir through the milk. Sprinkle the nutmeg over the top. 
4. Put into the oven and cook for 2 hrs or until the pudding wobbles ever so slightly when shaken.
5. Once set, take out the oven and enjoy hot or cold with a topping of your choice or plain or both lovelies!

Hey Lovelies, 

Writing blog posts can sometimes hard. You can get stuck in a rut at times and want to share something, but don’t really know what to say or do. I find that I go through creative stages. I know what I want to do, and I do it. Other times I have no clue but just want to write.

Today is one of those days. Life is very strange at the moment and so, I wanted to give you a little update on what is going on with me. For just over a month now I have been an inpatient on an eating disorder ward. I struggled for a long time with exercise addiction (I was doing over eight hours a day) and restrictive eating. I feared tons of foods and couldn’t get my brain around enjoying them again.

Sadly, before Christmas, my weight plummeted to, as the doctors said, “a deadly level.” It is scary to hear this and, in the end, I decided to agree with them and go into an inpatient ward. I have since spent Christmas, New Year’s and mostly all of January here. With the odd few hours out in London with my mum.

I won’t lie it is tough. I am struggling with boredom. I struggle being away from my family and friends. I have struggled to give up the control that my anorexia nervosa is feeding me. But I need to get better. I want to get better. I have so much I want to do on the outside. I want to see the littlest family members grow up. I want to enjoy foods again. I want to see my mum happy and not worried about me. I want and need a trip to Disney aha!

Some days I don’t want to speak, tweet or say anything to anyone and that is why it can be a bit quiet on here and on my social media. Sometimes I genuinely have no time and with therapy, groups and meal planning it can get a little bit too much. In those times I embrace the quiet.

Believe me when I say that I am still and probably always will be here. I just need to be able to have a few days in between if that is okay. I hope you all enjoyed Blogmas and I will definitely be doing that again this year lovely. In fact, I am trying to make sure I do all the things blogger related this year while in here and out to try and keep my creativity going.

I want to thank you for all the support and for all the help many of you have given me. The journey may have only just begun but I am going to keep fighting and staying strong. Love to you all.

Last night, the Screen Actors Guild Awards took place and it is safe to say that they certainly entertained. Brad Pitt and Jennifer Aniston reunited. Phoebe Waller-Bridge scoped a whole host of awards for the UK. The Crown took the throne. TV and films were celebrated galore.

Each speech seemed to get better and better as time went on. There isn’t anything like award season and I love it when the world of both forms of media come together to celebrate.

• 1 Pack of Ready to Roll Puff Pastry
• Strawberry or Raspberry Jam
• 200g Icing/Fondant Sugar
• Shredded/Desiccated Coconut (Enough to sprinkle on the top of each cheesecake)
• Egg (Optional)
• Frangipane (Optional)

• Baking Tray
• Knife
• Baking Paper
• Teaspoon
• Bowl
• Sieve
• Tablespoon

1. Preheat the oven to 200(C). Line your baking tray with baking paper and leave to one side.
2. Unroll your pastry and mark out 12 squares with the knife. Place six of them onto the baking tray, evenly spread out. These will be the bottoms of your cheesecakes.
3. Using a teaspoon, place a small amount of jam onto each base. Then spread to make a thin layer all over it. If you decide to use the frangipane, add a small teaspoon into the middle of each one.
4. Place the remain six squares onto the top of each pastry and press down along the sides to stick. You could use a little bit of egg wash to make sure that they hold.
5. Once ready, place in the oven for 20 minutes or until the top is a light golden colour. Leave on the tray to cool.
6. As the pastry cools, make the icing. Sift the powder into a bowl and add 4 tablespoons of water, one at a time, to make a thick paste-like texture. Make sure to keep stirring to prevent it from going hard.
7. When the pastries are ready, spoon an even amount onto the tops and spread to coat it all. Then sprinkle the coconut on top. Leave for around five minutes to set.
8. Once the time is up, it is time to dig into this good old-fashioned dessert!

Back in 2016, the world was horrified by the return of one clown. It birthed a whole host of Halloween costumes and a follow up all within the same year. Arriving again in 2019 to complete the classic Steven King story, IT: Chapter Two, out now on DVD, Blu-Ray and digitally, took hold of us all once more to make sure we never go to the circus again.

Bill Skarsgård returns as Pennywise the Clown, although this time it is a little different. Set 27 years after the first film, the Loser’s Club is all grown up. But they have not forgotten the terrors they faced as teens. When Mike Hanlon (Isaiah Mustafa) decides to get them all back together in Derry, to try and defeat the returned horror, he shares the story of how Pennywise came to be. Plus, the news that they are going to have to be the ones to defeat him again.

Whilst the first film delivered a truly terrifying mix of both the classic book, film and expectation, IT: Chapter Two has made sure that everything is heightened. The characters are captured at a time when society states that they shouldn’t be as scared as they once were. Yet, when faced with Pennywise and the superb acting from Skarsgård, it all works.

Less controlled than the first feature, the sequel has an air about it that makes you feel that the reins were loosened for all to make a horror that works. There are no worries about if it will work or not. It is simply a sequel that makes sure that what you got the first time is what you get again. Just even better.

With the likes of James McAvoy, Jessica Chastain, Bill Hader and the rest of the cast fitting the billing perfectly in the adult versions of the teens seen before, everything just has a flow for fans to fall into. It may be the longest horror film ever created, but with each chapter falling into place, it doesn’t feel like it.

You want to see Pennywise go to town on them. You want to see how they will defeat the monster. You want to see what they are going to do with the rest of their lives. And you do in many ways. It is a clever script that obviously cuts moments but doesn’t ever feel like it is doing so. The writing is simply that good.

For many reasons, IT: Chapter Two is better than the first film. With an all-star amazing cast, brilliant writing and King’s touch of brutality and innocence mixed together, the return of Pennywise is a pure joy. If I can say that.

• 2 ¼ Cups All-Purpose Flour
• 1 Teaspoon Baking Soda
• ½ Teaspoon Salt
• 1 Cup Softened Butter
• ¾ Cup Granulated Sugar
• ¾ Cup Packed Brown Sugar
• 1 Egg
• 1 Teaspoon Vanilla
• 2 Cups Milk Chocolate Chips
• 1 Cup Coarsely Chopped Nuts (Optional)

• Baking Tray (May need more than one)
• Small Mixing Bowl
• Large Mixing Bowl
• Mixing Spoon
• Cookie Dough Scoop
• Cooling Rack

1. Preheat the oven to 375(F) or 180(C). Grease and line the baking tray ready to be used later on.
2. In a small mixing bowl, add the flour, baking soda and salt. Place this to one side.
3. Now in a large mixing bowl, beat the softened butter and sugars together until fluffy. Make sure to scrap the sides of the bowl occasionally.
4. Add and beat in the egg and vanilla essence until smooth. Then stir in the flour mixture until the dough is stiff. Then place and mix in the chocolate chips and nuts if using.
5. Using the mixing spoon or a cookie dough scoop, place rounded tablespoonfuls 2 inches apart onto the baking trays.
6. Bake for 8 to 10 minutes or until light brown. Don’t worry if the centres are soft, they are meant to be. Once done, take them out of the oven, allow to cool for two minutes. Then place on a cooling rack to for a further 30 minutes.
7. Then you can store or enjoy as much as you like. Just remember to grab that classic glass of milk!
