Sunday Bakes: Tuck Into This Delicious Rice Pudding Recipe Today

Hey Lovelies, 

Since being in hospital and on the meal plan, I have had to have a light dessert every night. This could be jelly and ice cream, a yogurt, custard or a pot of rice pudding. I made a vow when I came in here that I would try to challenge myself.

Something I loved before my eating disorder took hold, was rice pudding. I have wanted to be able to enjoy it again for so long. Taking hold of that pot for the first time was terrifying. Yet, it made me realise just how much I enjoyed it and now I have it mostly every night.

This week’s Sunday Bake is a classic take on a homemade one. I wish I could go home and make some myself. For now, though, I will be enjoying my little pot, whilst I hope you all get stuck into this delicious recipe:

Ingredients
  • 100g Pudding Rice
  • 50g Sugar
  • 700ml Semi-Skimmed Milk
  • Pinch Grated Nutmeg
  • Small Amount of Butter for Greasing
Tools
  • 850ml Heatproof Baking Dish
  • Wooden Spoon
  • Sieve
  • Medium Sized Bowl
Method
  1. Preheat your oven to 150C/fan 130C/gas 2. Butter the heatproof baking dish and leave to one side.
  2. Using the bowl, wash the rice. Use the sieve to drain well. 
  3. Place the rice and sugar into the bowl and stir through the milk. Sprinkle the nutmeg over the top. 
  4. Put into the oven and cook for 2 hrs or until the pudding wobbles ever so slightly when shaken.
  5. Once set, take out the oven and enjoy hot or cold with a topping of your choice or plain or both lovelies!
