Sunday Bake: Go Back To Basics With This Three-Ingredient Banana Bread Muffins Recipe

Good Morning Lovelies,

Sunday’s are for baking on the blog! Today, I am back with a brand-new recipe for you all to tuck into easily. I am being super basic with this one lovelies. I mean I am going full on lockdown recipe. We are going all the way back to the start of this horrible time, when we learnt how to make a certain bread for the first or millionth time, to help use up those bananas.

Oh yes, you have guessed it, today’s Sunday Bake is a classic banana bread recipe. However, this one is for muffins instead. I made these a few weeks ago for my neighbours and my mum’s work friends, who are keyworkers, to help raise a smile on their faces. Now, I want to share this super simple three-ingredient recipe with you all.

Ingredients

  • 4 Large Mashed Ripe Bananas
  • 3 Cups Oats
  • 1 Tsp Vanilla Extract
  • Optional Fourth Ingredient – Chocolate Chips, Dried Fruit, Etc.

Tools

  • Muffin/Cupcake Tin
  • Muffin/Cupcake Cases
  • Large Mixing Bowl
  • Spoon

Method

  1. To start, preheat your oven to 350 degrees. Line a muffin or cupcake tin with muffin/cupcake cases and place to one side.
  2. Add all the ingredients together in a large mixing bowl and stir until well combined. If you are adding in an additional ingredient, stir the first three ingredients before adding and then mix it in.
  3. Using a spoon, fill the muffin/cupcake cases right up close to the top.
  4. Place into the oven and bake for 15-20 minutes. Once golden and set, remove, and leave to cool for five minutes in the tin.
  5. Enjoy whilst still warm or place into the fridge for a few days. They are perfect with so many toppings or occasions as well lovelies.
