The Ultimate Mexican Lasagne Recipe That The Whole Family Will Love

With this in mind, I have got a recipe to share with you all that mixes the richness of a chilli con carne with a classic Italian lasagne!

In our house, we are struggling a lot with knowing what to cook! As someone with an eating disorder and AuDHD, I know that my meals can be very similar. Whilst for my mum is finding it hard due to the weather and her internal desire for it to be autumn already. All of which leading to our weekly meal plan being a little all over the place.
Seeking inspiration from within our cupboards, I decided that comfort should be key and conjured up this recipe. Using the classical tastes of a hearty lasagne and chilli con carne, the following merges the two together to make a meal that lasts for days and never gets boring. In fact, this Mexican inspired lasagne gets better if left for a day or two.

Ingredients
500g of Beef/Plant Based Mine
One Finely Diced Onion
Two Crushed Garlic Cloves
One Diced Red Pepper
Two Tablespoons of Tomato Puree
One Tablespoon of Olive Oil
400g of Tinned Chopped Tomatoes
400g of Tinned Black Beans (Drained)
Two Teaspoons of Paprika
Two Teaspoons of Cumin
One Teaspoon of Mild Chilli Powder
A Pinch of Salt & Pepper
Eight Medium Tortilla Wraps
200g of Grated Cheddar Cheese
125g of Grated Mozzarella Cheese
Tools
A Large Frying Pan
A Mixing Spoon
A Large Oven Dish
Method
- To begin the recipe, grab a large frying pan and add in the oil. Allow to heat up before adding in the onion and pepper, cooking for five minutes until soft.
- Next add in the garlic and the mince. Cook until the mince has gone brown. Use your spoon to break it up as it cooks.
- When the meat is cooked, stir in the tomato puree, paprika, cumin and chilli powder, before cooking for a further minute to bring out the flavours.
- After fully combining the spices with the meat, add in the chopped tomatoes, black beans and sweetcorn, as well as the salt and pepper. Leave to simmer for 15 minutes, allowing for it to thicken.
- As the meat simmers, preheat your oven to 190ºC before grabbing a large ovenproof dish.
- Begin to assemble the lasagne in the dish upon the sauce finishing cooking. Start by adding a layer of the mince mixture, then a tortilla, followed by a sprinkling of cheese. Repeat until everything is used up. There should be a tortilla and plenty of cheese on the top.
- Place into the oven and bake for 25 to 30 minutes or until golden and bubbling. When it is ready, remove and allow for it to rest for five to 10 minutes before slicing, as this helps to keep its form.
- Once ready, dish up and enjoy with a whole host of sides and toppings including sour cream, guacamole, onions and even more tortilla chips!
This recipe is a fun take on a classic and can be adapted to suit any tastes. You could make it hotter. You could flip it and make it more Italian based in regards to the mince with the tortillas. You could even use the chilli sauce on top of lasagne sheets! There is no way that this meal can get boring lovelies, as it can be changed up so much! And each time it just gets even more delicious!
