My favourite dessert of all time is always a fruity crumble, which helped create this birthday cake inspired recipe!

What do you always pick to put your candles on on your birthday? I was always presented with a cake when I was younger. However, I have to admit that I haven’t actually ever been a big fan of cake. I love a fruit cake, like a good Christmas one, but I am not a big fan of the vanilla or chocolate ones you get for birthdays.
This led to my mum always having to come up with interesting ways to ensure that I had something to blow candles out with. At first, she would turn to my favourite kind of baked goods, doughnuts, but then it got harder when my eating disorder hit. She still tried though, including sticking a fountain candle in a fruit salad once.
A pudding I never had on my birthday though, which is odd as it is my favourite kind of dessert, was a crumble. I adore a crumble. Even now with my illness, I still love the taste of the stewed fruit mixed with honey that my mum makes best. With this in mind and with it being birthday week on the blog, I thought I would share a party inspired crumble that beats any cake.

Ingredients
Four Peeled & Chopped Medium Apples
One Cup of Frozen/Fresh Chopped Strawberries
½ Cup of Blueberries
80g of Sugar Plus An Extra Two Tablespoons For The Fruit
One Tablespoon of Lemon Juice
One Teaspoon of Vanilla Extract Plus One Extra For The Crumble
One Teaspoon of Cinnamon
180g of Plain Flour
100g of Cubed Cold Butter
One Tablespoon of Cornflour
Two to Three Tablespoons of Rainbow Sprinkles
One to Two Tablespoons of White Chocolate Chips
Two Tablespoons of Condensed Milk
Tools
Two Mixing Bowls
Two Mixing Spoons
A Baking Dish
Method
- To begin, preheat your oven to 180ºC, before grabbing a mixing bowl and adding the apples and berries to it, along with 80g of sugar, one teaspoon of vanilla extract, the lemon juice, cinnamon and cornflour. Stir until all combined before placing into a baking dish and spreading out.
- Next, take the condensed milk and drizzle it lightly over the fruit. Place the dish to one side until needed.
- Grab another mixing bowl and add in the flour and butter. Rub together until it resembles a sand like texture.
- Once ready, add in the remaining vanilla extract, sprinkles and the chocolate chips. Stir until fully combined.
- When the crumble is ready, sprinkle it loosely on top of the fruit. Don’t press it down onto the fruit, as it should come out crispy and crumbly.
- Place into the oven and bake for 35 to 40 minutes or until golden on top and bubbling around the edges. Remove and allow to cool a little before placing a candle in and singing happy birthday loudly with it!
Crumble with custard or ice cream is honestly the best comfort food and if there was ever a pudding that everyone will enjoy on their or your birthday, this is it! Use the fruit that you love, sprinkle with more or less sprinkles and really go to town on this wonder lovelies! It is like having another birthday present handed to you!
