Spice Up Your Midweek Meals With This Curry Inspired Recipe

January is one of the darkest months of the year! With not much to look forward to, I thought I would spice things up a little bit with this curry inspired rice dish, which is a bit like a paella or a risotto! Get ready to heat up the kitchen on cold winter days with this delicious dinner the whole family will love!

Good Morning Lovelies, 

The first time I went to Dublin, I had a butternut squash risotto and it was one of the best things I have ever eaten. Upon returning this year, I was saddened to see that the restaurant was no longer there, as the meal was something that you dream of having on a cold winter's day. 

Feeling inspired by those memories, I thought I would come up with a warming dish that has the same textures and cosy feels that the meal I had back then did. Although the dish I had was Italian, this curry one is equally as superb as that. Especially when enjoyed on the sofa under a warm blanket after a chilly day. 

Grab a bowl, fork and a cup of tea to go alongside this sweet potato and rice curry inspired delight…

Ingredients

One Peeled and Diced Sweet Potato

One Cup of Basmati or Long Grain Rice

One Onion 

Two Cloves of Garlic

One to Two Tablespoons of Mild Curry Powder

Two Cups of Chicken or Vegetable Broth


Tools

A Non-Stick Pan

A Mixing Spoon

A Measuring Jug


Method

  1. To start, grab a non-stick pan and cook the onion and garlic in a splash of water until soft. Then add in the curry powder and stir for 30 seconds to add flavour.

  2. Once softened, add in the sweet potato and rice and mix until everything is coated in the powder.

  3. When ready, add in two cups of the broth to help cook the rice without leaving any excess liquid. The dish should be brought to a gentle boil to create this.

  4. As soon as it starts to boil, cover the pan and allow to cook on low, simmering for 15 to 18 minutes without lifting the lid. This allows for all the liquid to be absorbed. If there is still liquid, remove the lid and allow it to steam dry on low for two to three minutes whilst stirring it occasionally.

  5. Upon the liquid being removed, your dish is ready to serve and enjoy! To make the rice a little bit more creamier, you can also mash the sweet potato a little and you can add in extra flavourings too. Though this is entirely up to you!

This dish is so easy and fun to make lovelies in very little time at all, so if you can’t be bothered due to the darker nights but want something warm and comforting, this is a perfect meal! It also makes for a great fakeaway and in a wrap the next day for lunch! It really is a taste sensation!
