Pumpkin carving season is in full season and rightly so! You can’t have Halloween without those spooky orange faces looking back stylus! However, whilst it is great fun it can create a huge amount of food waste. Yet, it doesn’t have to!
Thanks to Maldon Sea Salt, the team behind the great tasting seasoning has made a pumpkin pie recipe that is pure perfection. Honestly, it is fallen leaves, cosy nights in and Halloween all wrapped up into one delicious dish.
Ingredients
320g of Short Crust Pastry (Can Be Homemade or Shop Brought)
One Tin or 425g of Fresh Pumpkin Purée
150g of Light Brown Sugar
One Teaspoon of Cinnamon
Thumb of Ginger, Grated
1/3 of a Nutmeg Kernel, Grated
A Pinch of Ground Black Pepper
Two Teaspoon of Maldon Smoked Sea Salt
Three Beaten Eggs
175ml of Double Cream
Tools
A 23cm Tart Tin
A Fork
Baking Paper
A Baking Tray
A Mixing Bowl
A Whisk
A Mixing Spoon
Method
- Start by preheating your oven to 170°C before rolling out your pastry to fit the base of a 23cm tart tin. It should be around the thickness of a pound coin.
- Gently prick the base of the pie with a fork then cover with baking paper and fill with baking beans.
- Place the tart tin onto a baking tray, to make it easier to move in and out the oven, before baking for 20 minutes.
- After 20 minutes, remove the baking paper and beans and place back into the oven for 10 minutes until dry and lightly golden.
- Whilst the pastry bakes, mix together the pumpkin puree, sugar, spices and Maldon Smoked Sea Salt in a mixing bowl.
- Add in the eggs and whisk until well combined. Then add in the cream and whisk again.
- When the mixture is ready, pour into the pastry case and bake for 35-40 minutes until the filling is set.
- Once baked, remove from the oven and allow to cool at room temperature before chilling until ready to serve.
Upon serving, it is fantastic with some soft whipped cream and a little more of the Maldon Smoked Sea Salt. However, the dish is fantastic anyway you have it! Maldon has really outdone itself with this one lovelies. Honestly, Pumpkin season has never tasted so good!
