It’s time to get summer ready with my super quick, easy and fruity frozen delight! Using just two ingredients, you can get a gorgeous ice cream in no time at all! I promise you will be making it all summer long and maybe even into autumn and winter as a soft serve. 


Get ready to whip up a frozen frenzy with this mango and coconut ice cream that everyone is going to love…


Ingredients 

Three Mangoes 

One Can of Full-Fat Coconut Milk

Desiccated Coconut (Optional)


Tools

Knife

Chopping Board

Spoon/Spatula

Food Blender or Processor

Freezer Proof Container

Freezer Proof Bowl


Method

Start by skinning and chopping the mangoes into small chunks. Place into a bowl and pop into the freezer until solid.


Once the fruit has frozen, place it into the food processor or blender and add in the can of coconut milk. Blend until the mixture is smooth and creamy.


When the mixture is of the correct consistency, use a spoon or spatula to place it into the freezer proof container. Freeze the mixture until it is a firm texture. You can also enjoy this as soon as it has been blended as more of a soft serve too. Whatever it may be, I hope you scoop up and enjoy all summer long!
