It's Time To Celebrate With This 3-Ingredient Birthday Cake Recipe

Next week is a very exciting time! Not only is it my birthday, but I am going away to celebrate it with my family. I can’t wait to jump on the train and go on holiday again. I have missed my brother and nephew a lot and am really looking forward to seeing him. It is also the blog’s big birthday too.
Therefore, I thought it would be a good time to share a birthday cake recipe that is super easy and can be made in no time. Get those mixing bowls out and bake this beauty ASAP:
Ingredients
- 3 Large Eggs
- 1 Cup of Granulated White Sugar
- 1 Cup of Plain Flour
Tools
- 8” Cake Tin
- Large Mixing Bowl
- Whisk or Fork
- Spatula
- Sieve
- Toothpick
Method
- Start by preheating the oven to 350(F) or and grease and line an 8” cake tin, leaving to one side once prepared.
- In a large mixing bowl, add the eggs and sugar together, beating fast with a whisk or fork until the mixture becomes thick and pale yellow in colour. You can also use a stand mixer if easier.
- Sift in ⅓ of the flour, folding into the egg and sugar mixture. Make sure to not deflate the mixture too much by using a spatula to fold. Repeat with another ⅓ of flour, before adding the final ⅓ of flour and doing the same process again.
- Once ready, pour into the prepared cake tin and place into the oven. Bake for 25 to 30 minutes or until there is a solid light brown crust over the cake and a toothpick comes out clean. Be careful not to crack the cake when inserting the toothpick, as it is very delicate. When ready, leave to cool completely in the tin.
- Remove carefully and decorate with icing sugar or fresh fruit and enjoy.
