This Caramel Cookie Recipe Makes For The Ultimate Bank Holiday Pudding!
00:00:00Slaving over a big dessert on a Sunday in the summer is not something many of us want to be doing! However, a roast dinner must always be followed by something sweet! In fact, even if you are not having a roast, a pudding is a must, which makes this caramel filled biscuit recipe a must to make! You will absolutely love them!
Good Morning Lovelies,
Biscuits are a staple in our house! No matter what time of the year it is, you will always find our biscuit tin full to the brim with a wide selection of them. From Hob Nobs to Fig Rolls, we love them all in every form, shape and size. Especially my mum, who can’t function without a cup of tea and a few biscuits at least once a day.
Therefore, with a Sunday roast upon us, I thought I would share a biscuit recipe that is perfect as a pudding, snack or simply as a piece of pure joy during the hot summer months. Taking hardly any time at all to make, you won’t have to spend hours under the heat of the kitchen with these caramel filled wonders.
I will warn you though, you may spend a lot of time within your kitchen because once you take your first bite of these, you won’t be able to stop making them…
Ingredients
125g of Soft Butter
One Egg
100g of Light Brown Sugar
One Teaspoon of Vanilla Extract
180g of Plain Flour
½ Teaspoon of Baking Powder
100g of Chopped Soft Toffee or Caramel Sweets
50gg of White Chocolate Chips
One Tablespoon of Honey or Golden Syrup
A Pinch of Salt
Tools
A Baking Tray (You May Need Two For This)
Baking Paper
A Mixing Bowl
A Mixing Spoon
Method
- Start by preheating your oven to 180ºC before lining a baking tray with greaseproof paper. Place to one side.
- Next, grab a mixing bowl and add in the butter and brown sugar. Beat together until light and fluffy.
- Add in the egg, vanilla extract and the syrup/honey, before combining together well.
- Then add in the flour, baking powder and salt and mix again before stirring in the toffee/caramal pieces and the chocolate chips.
- Once the dough has formed, take equal amounts in between your hands and roll in to small balls before placing them onto your baking tray. Keep going until your tray is full. You may need to repeat this a few times until all the mixture is gone or use more trays if you wish.
- Before placing the cookies into the oven, flatten them lightly with your hand or the back of a spoon.
- Place into the oven and cook for 11 to 13 minutes or until golden around the edges but soft in the middle.
- When ready, remove from the oven and allow them to cool for 10 minutes on the tray/trays. The caramel will go gooey inside as they sit making them even more delicious!
These cookies can be adapted to suit any of your preferences lovelies, including changing up the chocolate, adding spices or even mingling in some sea salt to create a salted caramel effect! Whatever you create though, I am sure that they will be delicious!
