When we were in Belfast, we were often greeted each day with the delicious smells of the traditional food being cooked around us. From colcannon to stews, the city was full to the brim with dishes that made us feel all warm and cosy inside. Even in the heart of summer.
One dish that we could not escape from was champ and soda bread, which we often saw on plates around us. Intrigued by it all, my mum was eager to give it a taste and instantly loved the buttery potato recipe, leading to us recreating it at home with this recipe.
Mixing two iconic Irish foods, this dinner feels like the perfect way to end this fun week full of Belfast beauties. I hope you can enjoy it until you get to the city itself lovelies…
Ingredients
Two to Three Medium Potatoes
A Lot of Butter + More For Frying
A Splash of Milk
Two to Three Spring Onions
Two Slices of Soda Bread
100g of Mature Cheddar Cheese
A Pinch of Salt & Pepper
OPTIONAL: Extra Spring Onions/Black Pepper
Tools
A Saucepan
A Masher
A Sieve
A Mixing Spoon
A Knife
A Chopping Board
A Frying Pan
A Spatula
A Plate
Method
- Start by grabbing your saucepan and adding in the potatoes. Boil until soft, before draining and adding in lots of butter, the splash of milk and the salt and pepper. Mash this all together until well combined.
- Next, cut up the spring onions finely and stir into the potatoes. Place to one side.
- Grabbing a knife and chopping board, slice the soda bread into thick fingers and squares.
- Take a frying pan and melt the remaining butter over a medium heat. Add in the bread and fry until golden and crisp on the outside on both sides, turning with a spatula for even cooking. Pop onto a plate once done.
- Get a hold of your champ and whilst it is still hot, add the cheese onto the top of it. If the champ has cooled too much, place it into the oven or under a grill for a few minutes to melt the cheese.
- Once ready, spoon the champ onto your chosen plate, with the cheese on top and serve with the crisp soda bread. Add a sprinkle of pepper or some extra spring onions if you want to.
This is such a perfect and light meal to have when you want something hearty but can’t be bothered to do too much cooking! The Irish know how to make a dish delicious and this is one of those meals that will stick with you for a long time! Get ready to add it to your weekly meal choices!
