Enjoy A Taste Of Italy With This Creamy Tomato Pasta Recipe

Spring has sprung, which has brought out all the Italian vibes in our house! From big plump tomatoes to refreshing salads, we have gone overboard on bringing the Mediterranean into our kitchen in honour of my Italian papa! Today, I wanted to share with you a lazy day pasta recipe that will make you feel like you are on holiday in no time!

Good Morning Lovelies, 


Years ago, when I went to Sicily with my Papa, who was from there, I was faced with plate after plate of the most refreshing food from the island possible. Fruits fresh off the vine and vegetables just picked and selected from the market that morning made up every plateful. Honestly, I don’t think I had ever had food quite like it. 


Especially when it came to the pasta, which I believe is only made the best within the land. However, as soon as the sun hit our house, I went into the kitchen to put some of our favourite ingredients together to make a dish that even my mum, who is not the biggest pasta fan, loved! 


In fact, it was such a big hit that I wanted to share it with you lovelies! Great for when you need to make something quickly or simply are feeling a little bit lazy when it comes to spending time in the kitchen, this is a bowl of Italian sunshine that will help to really motivate you again…


Ingredients

180g-200g of Pasta (Fresh or Dried)

200g-250g of Cherry Tomatoes

60g-80g of Fresh Spinach (Or 100g of Frozen)

150ml of Single Cream

40g-50g of Fresh Parmesan

500ml to 600ml of Water (To Cook The Pasta)

A Mixing Spoon 


Method

  1. Start by grabbing your large cooking pot before adding in the pasta, tomatoes, cream and water. 
  2. Place onto your hob and allow to simmer over a medium heat uncovered. Stir the mixture occasionally to prevent sticking. 
  3. During the cooking process, don’t panic if the tomatoes burst, as this will add to the flavour, as the liquid reduces and turns into a sauce, which the pasta will absorb too. 
  4. Around 10 to 12 minutes into cooking, just before the pasta is done, add in the spinach and parmesan and stir to combine until the sauce is creamy, the pasta is cooked and everything is well combined. If it looks too dry, add a splash more water and if it looks too watery, leave it to simmer for a bit longer.
  5. Once ready, remove from the hob and dish up! You may want to add a little extra cheese here if you wish lovelies!

The recipe is so easy lovelies and perfect to do as a family or on a hot sunny day when the idea of being in the kitchen for too long is dreadful! It is a burst of Italy in a pan and I hope you all love it as much as we do!
