With the spring sunshine beating down on us, you can’t help but want to bring it into every single aspect of your life! Including the kitchen, which is full of amazing inspiration to make sunny recipes that everyone will love! Including this delicious lemon filled one that takes no time at all! Get ready to tuck into it as soon as you can!

Our house has always been filled with little hints and factors that remind us of the gorgeous Italian sights that my dad grew up with. Even since he passed away, we can’t help but be influenced by him with our choices. This includes the bakes and recipes that we make. 


Having been enjoying the sunshine making its way back into our lives this Spring, we’ve been using this sunny side of life to add a bit of colour to our food that replicates the bright yellows from outside. All of which led to this super easy and delicious lemon filled recipe that I couldn’t wait to share with you all. 


Easy enough for the whole family to get involved with, this will bring a smile to all your faces from the moment you start making it right up until you eat it lovelies. I hope you like it…


Ingredients

250ml of Double Cream

Two Tablespoons of Icing Sugar

Zest of One Lemon

Three to Four Tablespoons of Lemon Curd

Crushed Digestive or Shortbread Biscuits

OPTIONAL: Fresh Summer Berries


Tools

A Mixing Bowl

A Whisk

A Spatula or Mixing Spoon

A Tablespoon

Serving Glasses or Jars


Method

  1. Start by grabbing your mixing bowl and add in the cream and icing sugar. Using a whisk, beat them together until soft peaks form.
  2. Once mixed thoroughly, fold in the lemon zest. 
  3. Gather the rest of the ingredients and your serving glasses and jars and prepare to start layering the puddings. 
  4. To begin making the final products, add in some of the crushed biscuits to the bottom of each glass or jar and flatten with a spoon until the bottom is fully covered. Then add in a spoonful of lemon curd and repeat. 
  5. Follow the curd with a layer of the cream mixture and keep repeating this until the glasses or jars are full. 
  6. When every glass or jar has been completed, you can add in a sprinkling of berries or extra biscuit crumbs to top them off before digging in! 

So simple and truly delicious, these little puddings are the perfect dishes to serve to bring in a hint of sunshine, even on a cloudy day! When life gives you lemons, you just have to make these lovelies!
