Use Up Those The St Patrick's Day Treats With This Delicious Whiskey Filled Cake Recipe

With this in mind and with St Patrick’s Day having left us with a whole host of Irish delights, I thought I would get us all back in the party mood with this delicious fruit cake recipe that uses up all those Irish inspired leftovers from the main event!

Since I first went to Dublin at 21, I have loved everything about Ireland. The people are grand and full of amazing craic. The drinks are the best in the world and the stews are truly hearty. You see things when walking the streets of any Irish city that you wouldn’t see anywhere else. It is the place that I call my true home and whenever I go there I feel instant happiness.
Therefore, with St Patrick’s Day now over, my heart is a little sad. So, I thought I would share with you all a very tasty recipe that uses up all of those leftover treats from the big day in the most wonderful way. Super simple and full of cupboard staples, making it very low cost too, its time to say slainte to this Irish honey and whiskey based one lovelies…
Ingredients
One Cup of Mixed Dried Fruit
¼ Cup of Irish Whiskey (Jamesons or Teelings = The Best)
One and a ½ Cups of Plain Flour
One Teaspoon of Baking Powder
One Teaspoon of Bicarbonate of Soda
½ Teaspoon of Salt
One Teaspoon of Ground Cinnamon
One Teaspoon of Ground Nutmeg
½ Cup of Softened Butter
½ Cup of Brown Sugar
Two Large Eggs
¼ Cup of Honey
½ Cup of Buttermilk
The Zest of One Orange and One Lemon
Tools
Three Mixing Bowls
Two Mixing Spoons
A 9 Inch Baking Tin
Baking Paper
A Toothpick
OPTIONAL: Ireland Inspired Stencils
Method
- Start by placing the dried fruit into a bowl along with the whiskey. Leave to soak for one hour or overnight depending on how intense you would like the flavours to be.
- Whilst the fruit soaks, preheat your oven to 165°C before greasing and lining a 9 inch baking tin with baking paper. Place to one side.
- In a mixing bowl, add in the flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg and stir before mixing together completely.
- Using a separate bowl, place in the butter and sugar before beating together until light and fluffy. Then add in the eggs, one at a time, before adding in the honey, buttermilk and fruit zests. Stir to combine fully.
- Add the dry mixture and wet mixture together in one bowl and fold until just combined.
- When ready, it should be time to add in the soaked fruits. Fold again before pouring into the prepared baking tin.
- Place into the oven and bake for 50 to 60 minutes or until a toothpick comes out clean.
- Once ready, remove from the oven and allow to cool in the tin for 10 minutes before moving to a wire rack to cool completely.
- OPTIONAL STEP: If you want to go a little bit extra lovelies, you can add an additional drizzle of whiskey or a honey glaze to the top, before dusting with icing sugar in a shamrock or Irish inspired shape.
This cake is perfect with a beautiful cup of whiskey on a cold evening or with a gold old fashioned Barry’s tea in the afternoon! However you choose to enjoy it, I hope you feel the luck and love of the Irish within every bite!
