However, you probably don’t think about the epic spread that is Vegemite! Full of flavour, a jar of this stuff can transform classic dishes into something else this festive season! Vegemite and Marmite are two foods that can divide a nation! Whilst us Brits love the thick stuff on toast, Aussies love their version just as much in many ways. With so many of us dreaming of going down under during the colder months, Australia is coming to our shores instead this Christmas to help bring our festive buffets a new lease of life.
Whether it be in the evening of the big day or on Boxing Day, you can add the spread to a whole host of classic picky bits to make them even better. With just one jar, you can make those sausage rolls take on a whole new form. A bit like they have put on a tuxedo and are ready to celebrate too.
To show you what I mean, I have a fantastic and super tasty recipe for Vegemite and Cheese Sausage Rolls from the masters of Australian cuisine, Scott Hallsworth and Hayden Quinn to share with you. Having put the following to the test, I can confirm from my family’s reaction that Christmas buffets are about to get a whole lot better…
Ingredients
500g of Pork Mince
One Cup of Breadcrumbs
One Tablespoon of Milk
One Small Finely Diced Brown Onion
Three Teaspoons of Toasted Fennel Seeds
Two Whole Eggs
One Tablespoon of Vegemite
One and a ½ Cups of Grated Cheddar Cheese
Two Ready Rolled Sheets of Puff Pastry
Tools
A Baking Tray
Two Mixing Bowls
A Mixing Spoon
Two Pastry Brushes
A Knife
A Teaspoon
Method
Start by preheating the oven to 200°C before lining your baking tray with greaseproof paper. Place to one side.
In a mixing bowl, add in the pork mince, breadcrumbs, milk, onion, fennel seeds and one egg. Leave to one side.
Grabbing your pastry, roll them out and halve each one. Using a pastry brush, brush one long edge with Vegemite.
Place the sausage mix on top of the pastry and sprinkle it with one cup of the cheese before rolling to enclose the filling in the pastry.
Using a knife, cut each roll to your correct size and place onto the baking tray seam-side down.
In another bowl, add in the second egg and use your clean pastry brush to brush the rolls before drizzling Vegemite over the top with a teaspoon. Add the remaining half of cheese over the Vegemite.
Place into the oven and bake for 25 to 30 minutes or until golden and cooked through.
Once ready, remove from the oven and allow to cool a little before serving.
These little Vegemite wonders are absolutely wonderful on their own or dipped into a sauce! Everyone who tries one this festive season will be begging you for the recipe! Something the Australians and Vegemite can be really proud of, as they will bring sunshine to all our Christmas parties!
