The Ultimate Summer Bread & Butter Pudding Recipe

As I wrote this, we have just survived two very hot days at 34° in the UK! I won’t lie, it was not nice! However, the sunshine did bring with it some much needed love for our summer berry plants, which thrived on the rays.
With hundreds at hand, I thought I would turn a classic British pudding into something new. Taking the old fashioned bread and butter pudding many of us love, I’ve removed the normal raisins, replacing them with summer berries. And it is truly a seasonal delight.
Get ready to enjoy this refreshing pudding all summer long…
Ingredients
Six Slices of White or Brioche Bread
Two Eggs
One and a Half Cups of Mixed Summer Berries (Strawberries, Raspberries, Blueberries, etc)
One and a Half Cups of Whole Milk or Cream
1/4 Cup of Sugar
One Teaspoon of Vanilla Extract
Tools
A Small Baking Dish
A Knife
A Mixing Bowl
A Whisk
Method
- Start by preheating the oven to 180°C / 350°F before greasing a small baking dish.
- Taking your bread, cut or tear it into chunks or triangles and layer the pieces into the dish, placing the berries in between each slice.
- In a separate bowl, whisk together the eggs, milk, sugar and vanilla until smooth, before pouring over the bread and berries until well soak.
- Allow the mixture to sit for 10-15 minutes until the mixture is fully absorbed.
- Place into the oven and bake for 25-30 minutes until golden and set.
When ready, this dessert is perfect on its own warm or with ice cream, custard able cream! It is like summer in a bowl! I hope you all enjoy it lovelies!
