Forget Flapjack! This Summer It’s All About Oat Cups With This Recipe

With summer here, the day trips, picnics and beach days call for food to be packed up and taken with us! However, it can be a bit of a struggle to please everyone or to create something a bit different for all to enjoy! Don’t worry though, as I have a super easy recipe for you that can be enjoyed all day, everyday!

Good Morning Lovelies, 


Oats are a proper staple in many of our kitchens. From porridge to flapjacks, they can be used to create some of the best meals or dishes ever. However, they are now about to become the face of food on the go with this recipe. 


Using simple kitchen staple items, I have a dish that can be enjoyed as a breakfast, snack or dessert when on a day out. Honestly, our picnics or lunch boxes and bags are going to the talk of the town with these chocolatey oat cups! It’s time to dig in…


Ingredients

One Mashed Banana

Four Tablespoons of Cocoa Powder

1/2 Cup of Rolled Oats

Two Tablespoons of Skimmed Milk

One to Two Tablespoons of Vanilla Extract

One Tablespoon of Plain Flour

One and a Half Tablespoons of Honey

One Teaspoon of Baking Powder 

A Pinch of Salt

A Handful of Chocolate Chips


Tools

A Muffin Tin

Muffin Tin Liners/Cases

A Mixing Bowl

A Fork

A Spoon


Method

  1. Start by preheating your oven to 180°C/350°F before greasing or lining a muffin tin, before placing it to one side.
  2. Taking a mixing bowl, place your banana inside and mash with a fork. 
  3. Once mashed, add in the oats, flour, baking powder, salt and cocoa powder. Stir to combine them together. 
  4. When combined, add in the vanilla extract, honey and skimmed milk. Mix again to form a thick batter. If it is too dry, you can add a little bit more milk. 
  5. Taking a spoon, use it to place the mixture into the muffin tin. When done, use the back of the spoon to smooth the tops. 
  6. Place a few of the chips on to the top of each cup. 
  7. Pop the tin into the oven and bake for 18 to 20 minutes or until they are firm on top and slight soft in the middle. 
  8. When ready, remove from the oven and allow go cool for five minutes, before enjoying them at home or on the go.
