With beautiful landscapes, lovely locals and wonderful food, it is easy to see why so many of us adore Spain. Having ventured to the island as a teenager, I can still recall the gorgeous beaches and gracious people that were there. Something that really stood out to me though was the food.
One night, we all headed out to a restaurant and I can still recall the beautifully rich tomatoes and sauce that my lasagne was made with. The dish was so fresh that I was in awe of it. Inspired by these tastes and the beautiful warm weather, I thought it might be nice to introduce a new series to the blog.
As we head off on our holidays, I wanted to create some recipes that will prepare or remind us of those blissful days by the sea. Starting with this gorgeous vegetable paella dish from Spain. Sangria is optional…
Ingredients
One Cup of Short Grain or Paella Rice
One Small Chopped Onion
Two Minced Garlic Cloves
One Sliced Red Pepper
One Sliced Orange Pepper
One Diced Courgette
One Chopped Large Tomato
One Teaspoon of Sweet Paprika
A Pinch of Turmeric (For Colour)
Three Cups of Vegetable Broth
A Sprinkle of Salt
Tools
A Large Nonstick Pan
A Mixing Spoon
A Pan Lid or Tea Towel
Method
- Start by dry sautéing the onion and garlic in a large nonstick pan over a medium heat. If you need to you can add a splash of water to help prevent sticking. Keep stirring until soft.
- Next, add in the peppers and courgettes and cook for five minutes. Again, water can be added if needed.
- Stir in the tomato, paprika and turmeric and cook for two to three minutes or until the tomato has reduced a little.
- Add in the rice and stir until everything is coated before pouring in the broth. Bring to a light boil before sprinkling in the salt.
- Lower the heat to a low medium or low setting and stop stirring. Leave the mixture to cook for 20 minutes until the rice has absorbed the liquid and is soft.
- Turn off the heat when ready and cover with a lid or clean tea towel before leaving to sit for five minutes.
- Once ready, add a few lemon wedges if desired and serve!
