Strawberry Cakes Forever With This Easy Recipe

It’s time get those baking tins out to make something truly fruity and delicious!

Summer, berries and cake! What more could you want at a sunny party lovelies? With so many editions out there, I thought I would share with you lovelies a super simple recipe to help you bring all three elements together!
Here in the UK, we love a Victoria sponge, with fresh cream and strawberries! However, they can take a little bit of time and the cream doesn’t always do well in the sun. Therefore, I have a miniature version to share with you all that you can take to every summer event!
It’s time to go strawberry picking before baking up these berry beauties…
Ingredients
One Cup of Plain Flour
One Teaspoon of Baking Powder
1/2 Cup of Skimmed Milk
1/2 Teaspoon of Vanilla Extract
1/2 Cup of Finely Chopped Fresh Strawberries
1/4 Cup of Granulated Sugar
1/4 Cup of Applesauce
Tools
A Muffin, Doughnut or Cupcake Tin
Mini Cake Cases
Two Mixing Bowls
A Whisk
A Mixing Spoon
Method
Start by preheating your oven to 175°C/350°F before lining a muffin or cupcake tin with .
Taking your mixing bowl, add in the flour, baking powder and sugar, whisking together.
In another bowl, add in the milk, vanilla and applesauce, combining them together.
When both bowls are ready, add them together and mix until just combined but don’t overdo it.
Add in the chopped strawberries and fold together.
Once ready, spoon the cakes into the tin until each space is 3/4 full.
Place into the oven and bake for around 18-20 minutes or until a toothpick comes out clean.
When baked, remove from the oven and allow them to cool slightly.
These are perfect with fresh cream, even more fruit, custard and ice cream lovelies! In fact, if you hear the local ice cream man, ask him to top one off with a good old Mr Whippy style version! You won’t regret it!
