Use Up Leftover Rice With This Delicious Recipe

Summer is a great time to gather everyone together for a BBQ or sunny celebration! However, with so much food on offer, there is often a lot of leftovers, which sadly end up going to waste! Today, I have an exciting recipe to help you use up all those ingredients before they are forgotten! Perfect as a side dish or delicious main meal!

Good Morning Lovelies, 


Whenever my family has a get together, there are often lots of leftovers, which my family works their way through for a number of days after. Yet, sadly, there are often still items that go to waste. Something we are working hard to stop doing! 


If you are like us, I have a recipe that is going to help you use up those ingredients before they go to waste in a quick and easy way! Using rice, vegetables and spices, this is perfect as a main or a side any day of the week. It’s time to get chopping…


Ingredients

Leftover Cooked Rice (Any kind is fine)

One Finely Sliced Carrot

One Thinly Sliced Courgette

One Sliced Bell Pepper

One Freshly Grated or Minced Garlic

A Pinch of Tumeric


Tools

A Non-Stick Pan

A Mixing Spoon


Method

  1. On a low heat, lightly cook the carrots, courgette and bell pepper in a non-stick pan until soft. You can add a splash of water to further prevent sticking. 
  2. Add in the garlic and turmeric and stir for a further one to two minutes until fragrant. 
  3. Mix in the cooked rice and combine everything together until the rice absorbs the flavour and turns golden. 
  4. Serve whilst hot! You can add extra sauces or even a squeeze of lemon juice to give it a little bit extra lovelies! 

This is so easy, so quick and so tasty lovelies! You could even make this with microwaveable rice, so you don’t have to worry about cooking rice if you haven’t! It would also work well with leftover meats or other vegetables lovelies, so experiment to find the ultimate dish for you! You won’t be disappointed, I promise you!
