Bring The Sun Inside With My Lemon Drizzle Cake Recipe

Summer is here and that means that it is the perfect time of year to break out the sun filled bakes! Lemons are everywhere at the moment, making the classic lemon drizzle cake a winner for all! Bring the sunshine to your table with this very easy recipe that only uses a few ingredients to create! You won’t want to stop making it!

Good Morning Lovelies, 


Lemons are a food that reminds me of my dad! From Italy, he would always make sure that anything lemon was in our home, as it reminded him of the vineyards that his family ran back in Sicily. Therefore, when I smell lemons or see them in something, I always want to bring it home to help get that real sense of summer. 


Last week, my mum’s friend at work had her birthday, so I decided to make her a lemon drizzle cake to celebrate. Super easy to bake, I thought I would share the recipe with you to enjoy this sunny season.

Ingredients For The Sponge

150g of Self-Raising Flour

Three Medium Eggs

150g of Caster Sugar

One 1/2 Teaspoons of Lemon Extract

150g of Softened Butter or Magarine


Ingredients For Drizzle

One to Two Teaspoons of Water

Three Tablespoons of Icing Sugar

1/2 or One Teaspoon of Lemon Extract


Tools

A Small Loaf or Round Cake Tin

Greaseproof Paper

A Mixing Bowl

A Mixing Spoon

A Small Bowl

A Skewer


Method

  1. Start by preheating your oven to 180°C (160°C fan) / 350°F / Gas Mark 4 before greasing and lining a small round cake or loaf tin. Put to one side. 
  2. Taking your mixing bowl, add in your butter and sugar and mix together until light and fluffy. 
  3. Once ready, add in each egg one at a time, stirring well after each one until combined. Then add in your lemon extract and stir. 
  4. Pour in your flour and fold together until well-combined. 
  5. Once your mixture is ready, pour it into your prepared tin and place into the oven for around 35-40 minutes or until golden and a skewer comes out clean. 
  6. Whilst the cake is baking, make the drizzle by adding all the ingredients together in a small bowl and stirring together until smooth and runny. 
  7. When the cake is finished baking, remove from the oven and poke small holes using a toothpick into the top. Pour the drizzle over the top and leave it to soak in as the cake cools. 
  8. Enjoy lovelies with some ice cream, whipped cream or custard!
