Enjoy Pancake Day A Different Way With This Italian Inspired Recipe

It won’t be long until Pancake Day is upon us lovelies! Yet, if you are holding off on any flipping action until then, I have a recipe for you that will give those taste buds what they want! With an added Italian twist, these little pots of wonder are perfect to break out at any occasion! Get ready to serve these a lot!

Good Morning Lovelies, 


Pancake Day was easily one of the most exciting days of the year in our house! My mum would always make me, my brother Gio and dad eat our dinner, all before heading into the kitchen to make us piles of them. I would love a savoury plain butter one or a completely sickly sweet kind with syrup or honey. Whilst my dad and brother would enjoy sugar and lemon on theirs. 


We didn’t really have them any other time of the year, so it was always a big event. However, as we got older, they became more of a staple breakfast. Both the homemade and shop brought kind would be broken out on the weekend or over special holidays to much joy. 


However, there did come a point where we got sick of them, so we had to get more inventive with them to bring back our love of those beautiful creations. Therefore, I thought I would share with you an Italian inspired recipe that will give you a whole new  taste experience in the lead up to the big day…


Ingredients

Shop Brought Mini Pancakes

200g of Mascarpone Cheese

Two Tablespoons of Sugar

150ml of Strong Coffee or Hot Chocolate (Cooled)

Cocoa Powder (To Sprinkle On Top)


Tools

Four Small Glasses or Bowls

A Large Mixing Bowl 

A Mixing Spoon

A Tablespoon

A Small Mixing Bowl


Method

  1. Start by adding the cheese and sugar into the mixing bowl. Mix them together until they are smooth in consistency. Place to one side.
  2. Grabbing the small mixing bowl, pour the coffee or hot chocolate into it. Dip each pancake into them before placing one each into the small glasses or bowls. 
  3. Using a tablespoon, begin to layer the mascarpone mixture over the pancake, before layering another on top and repeating. Do this for all four bowls or glasses. 
  4. When ready, dust with the cocoa powder and place into the fridge for at least one hour to set. The longer it is left the better.
  5. Once ready, grab a spoon and dig in!
