There is something quite lovely during the colder months about the aroma of certain spices filling the air. Walking into a coffee shop, you can often expect the smells of pumpkin spice to surround you. Something that inspired this recipe!
Normally, I like to make squash or pumpkin spiced soups, however, this year, I will be baking these cookies for my friends and family constantly. All so I can get that luscious smell in my home. You can learn how to with me below lovelies…
Ingredients
One Cup of Pumpkin Purée
One Cup of Smooth Peanut Butter
One Cup of Sugar (Either Granulated or Brown)
Tools
Baking Tray
Baking Paper
One Large Mixing Bowl
A Mixing Spoon
A Tablespoon
A Fork
Cooling Rack
Method
Start by preheating your oven to 175°C or 350°F, before lining a baking tray with baking paper. Place to one side.
Taking your large mixing bowl, add the pumpkin purée, peanut butter and sugar into it and mix until well combine and forming a dough.
Using a tablespoon, scoop out a small portion of dough and roll with your hands into a ball.
Place the balls onto your baking tray, with a good space between the each, before using a fork to flatten them slightly with a pattern on top.
Once ready, place into the oven and bake for 10 to 12 minutes or until golden and the edges are slightly set. When ready, let them cool on the tray for a few moments before moving them to a cooling rack to cool completely.
These cookies are pure perfection and can easily be made festive at Halloween with orange icing that will make them into a pumpkin! Plus, they are so soft and chewy that you can be left feeling so cosy all autumn long! Enjoy lovelies!
