Sadly, we couldn’t be with him, yet, that didn’t mean that I couldn’t mark the occasion, by sharing with you all a recipe for one of his favourite foods, brownies. Get ready to enjoy an endless amount of them this summer with this super easy dairy-free recipe
Good Morning Lovelies,
On the 14th May, my brother Gio turned 37! If we had been able to see or spend the day with each other, I would have presented him with a batch of his favourite brownies. The oozy kind with a fudge like centre that he loves best. Sadly, due to the distance between us, we couldn’t see each other.
There so, I thought I would celebrate with you lovelies instead, sharing with you all a gooey fudge like dairy-free brownie recipe that you are going to love. You won’t be able to leave your kitchen with the amount you are going to be making of them lovelies…
Ingredients
2 Cups of Pitted Medjool Dates
1 Cup of Unsweetened Cocoa Powder
Optional: One Teaspoon of Honey or Vanilla Extract
Equipment
Food Processor or Blender
Mixing Spoon
Mixing Bowl
Baking Dish
Baking Paper
Spatula
Knife
Method
Start by preheating your oven to 350°F or 175°C. Then grease and line your baking dish with baking paper before leaving to one side.
Place the pitted dates and the cocoa powder into the food processor/blender and pulse until the mixture forms a sticky dough like consistency. You may need to scrap the sides when doing this.
Add in the honey or vanilla, if using, and pulse for a few more seconds.
Grab your baking dish and pour the mixture into it. Carefully spread and press the brownie mixture down using a spatula, spoon or your hands.
Place into the oven and cook for about 15-20 minutes or until the edges start to firm up slightly.
Once ready, remove from the oven and allow to cool completely in the dish. When ready, cut into squares or bars and enjoy!
Great with ice cream, cream and chocolate custard, you won’t be able to get enough of these sticky, gooey, fudge like brownies lovelies! Oh, and happy birthday Gio!
