Burgers! Who doesn’t love a good juicy one! Whether it be fresh off of the BBQ or cooked on a smokehouse grill, the bigger, the better! To mark National Burger Day, I have a great selection of alternatives to share with you all to celebrate the big event, thanks to the brilliant Strong Roots & beyond! Get ready to tuck in big style!

Good Morning Lovelies, 


Tomorrow, the world will be firing up the BBQ, heating up the grills or pre-heating the airfryer, to help mark the wonder that is National Burger Day! Once dedicated to meaty delights, the day has grown bigger and better with the addition of a wonderful selection of plant based items too. Include the best ones ever from Strong Roots


Using only the best and most natural ingredients, the brand has used pumpkins, spinach, kale, quinoa and more to make burgers that are different but just as fantastic. Therefore, to mark the big occasion, I thought I would share a fun recipe, using their products to help make sure that everyone can get in on the action. 


Paired with chips, this is a dinner that calls for a big celebration upon taking every single bite…


Ingredients

Two Strong Roots Pumpkin & Spinach Burgers

½ a Cucumber

One Lemon

One Bag of Rocket

Two Tablespoons of Vinaigrette (Your Favourite Kind)

Three to Four Tablespoons of Mayonnaise

Two Seeded Burger Buns

A Bunch of Mint Leaves


Tools

A Vegetable Peeler

A Mixing Bowl

A Mixing Spoon

A Small Bowl

A Chopping Board

A Knife


Method

  1. Start by pre-heating your air fryer, before adding in the burgers for 10 to 12 minutes. 
  2. As the burgers cook, use a peeler to turn the cucumber into thin ribbons. 
  3. Grabbing a mixing bowl, add the ribbons to it, before putting the vinaigrette into it. Toss and place in the fridge until needed. 
  4. Next, take a chopping board and knife and chop the mint leaves. Place into a small bowl along with the mayonnaise and a squeeze of the lemon then stir to combine.
  5. When the burgers are done, take the sliced buns and add a dollop of the mint mixture onto each half, spreading to coat them. Then add the rocket to the bottom bun before placing a burger on top, then the cucumber and then the top bun. 
  6. Place onto your favourite party plate with some Strong Roots Skinny Fries before tucking in!
