Looking For Something Soft To Eat? This Recipe Will Do The Trick

After a tough tongue biopsy, I was faced with having to deal with a soft food diet! Something that can be very plain, boring and not exciting at all! This led to me searching my food cupboards to find something to excite my mouth, leading to this delicious recipe that is easy to make and will leave you feeling a whole lot better!

Good Morning Lovelies,

After having my tongue biopsy I was advised to have only soft foods for a few days! Something that as a person in eating disorder recovery and with an issue with temperatures and textures due to my AuDHD was incredibly hard. Often turning to my safe foods, I had to think up ways to make meals that I would enjoy and not fear. 

This led to a deep exploration into our food cupboard, where I faced many items that I fancied but wasn’t sure if they would work together. Thankfully, one recipe really did and it is that one which I wanted to share with you all. Using only a few simple ingredients, this delicious apple filled vanilla and apple creamy rice dish is a warming bowl of goodness. 

Perfect as a meal, pudding or even as a porridge replacement in the morning, it is so easy to do that you will be making it time and time again. Especially in the autumn and winter months, when this dish really sparkles…

Ingredients

⅓ Cup of Short White or Brown Grain Rice

One Small Apple OR Two to Three Tablespoons of Smooth Applesauce

One & ¾ Cups of Water (Plus Extra If Desired)

½ Teaspoon of Vanilla Extract

A Pinch of Salt

One to Two Teaspoons of Honey or Maple Syrup

OPTIONAL: A Pinch of Cinnamon


Tools

Two Saucepans

Two Mixing Spoons

A Hand Blender

A Bowl

A Knife

A Vegetable Peeler


Method

  1. To start, rinse out the rice well, before adding it into a saucepan with the water and salt. Allow for it to simmer for 25-35 minutes, stirring often to prevent sticking. Add more water if needed to make it seem overcooked and creamy, instead of grainy. 
  2. Once the rice is soft and ready, mash it with a spoon to remove any remaining grains. You can also use a hand blender to make the process quicker. The texture should be like a thick cream either way. 
  3. Next, take your apple and peel, core and chip it. Place into another saucepan with some water and cook for eight to 10 minutes until soft.
  4. Remove from the heat and again using your spoon or hand blender, mash it into a smooth puree. To skip this whole step, you can just use the applesauce. 
  5. Gently pour the puree into the cream rice, before adding in the vanilla extra and honey if using.
  6. Mix all the ingredients together until smooth and glossy before allowing it to cool a little. When ready, place into a bowl and enjoy! 

This recipe is perfect for batch cooking lovelies, as there is nothing in it that is harmful! It can also be frozen, meaning if you have to have more than one operation you won’t have to cook it again!
