Beat Cooking In A Heatwave With This Simple Rice Recipe

During this time, many of us will be breaking out the BBQ, however, if the idea of cooking over the coals or in the kitchen leaves you in a sweaty mess, I have just the thing for you! Using hearty ingredients and simple instructions, you will love this rice dish!

As soon as the weather gets a whole lot warmer, our house goes into a meltdown. Often, my health will take a real turn, whilst my mum can’t bear the idea of being too hot in the sun. Therefore, it is quite an uncomfortable period in our lives, which I am sure many of you will be able to relate too.
Something that really upsets my mum when the weather gets hotter is the idea of having to cook. She can’t stand being stood around a hot stove or oven, with the BBQ even bothering her, as she finds it just adds to her discomfort.
Therefore, to help her and I hope you lovelies out a bit, I have an easy summer inspired rice dish that is so easy to make that you won’t even break a sweat. Forks at the ready for this summer scorcher…
Ingredients
One Pouch of Cooked Rice (You Can Use Leftover Rice Too)
200g Green Beans
One Slice of Bread, Turned Into Breadcrumbs
Two Cloves of Garlic
Three to Four Chopped Tomatoes
Two Tablespoons of Butter
One Lemon
Olive Oil
Salt & Pepper
A Handful of Basil
Tools
A Saucepan
A Mixing Spoon
A Small Bowl
Method
- To start, place the chopped tomatoes into a pan, along with the olive oil and a pinch of salt and allow to cook for five minutes on a medium heat. The tomatoes should be softened and spoonable but still fresh looking when done.
- Using the same pan, add in the butter. Allow for it to melt before adding in the garlic and the breadcrumbs. Cook until all is golden.
- As this cooks, place your green beans into another bowl and pop into the microwave along with some butter and the zest of the lemon to warm through. One minute should do the trick with this.
- Once everything is cooked, place the heated or leftover rice into the tomato mixture, before adding in more lemon zest, a little butter, herbs and a pinch of pepper.
- When everything is ready, grab your favourite bowl and add in the tomato rice mixture, placing the green beans on top. You can add extra toppings here such as more breadcrumbs if you want to.
Low maintenance, quick to make and full of summer flavours, this is really the dinner that just keeps on giving lovelies! I hope you all enjoy it!
