Feel Like You Are In Dublin Right Away With This Dessert Recipe

However, with a trip not booked for a while, I am in a constant state of sadness that I won’t be there during the warmer months! Therefore, I have come up with this fun recipe to help bring that Dublin summer into our homes, no matter where we are!

Recently, I have been yearning to get back to Dublin. My body and soul needs to feel the wind from the River Liffey within it. I need to be coated in the warm sunshine of the city one minute and the freezing rain the next. My ears are dying to hear the sounds coming from a good old-fashioned pub. I truly think it would give me the motivation I need to get through these long summer days.
However, I haven’t got a trip planned to go back for a while. Therefore, I am having to come up with new ways to feel like I am back there. Inspired by my birthday trip last year, I have an exciting summer recipe to share with you that captures racing to the city’s coastal areas for an ice cream, whilst also snuggled up with a slice of cake in Ann’s Bakery or a Dunnes Store in the city centre.
This summer inspired ice-cream cone cake is a real delight that is perfect for making you feel like you are back on the emerald island…
Ingredients
Six Ice Cream Wafer Cones
100g Melted Butter (Kerrygold is the best!)
80g of Brown Sugar
One Egg
A Splash of Milk
A Hint of Vanilla Extract
OPTIONAL: Crushed Strawberries/White Chocolate Chunks
Tools
A Square Baking Tin
Two Mixing Bowls
A Mixing Spoon
Method
- Start by pre-heating your oven to 175ºC, before greasing and lining a square baking tin. Place to one side.
- Next, grab a mixing bowl and using your hands, crush all of the cones into it until they resemble crunchy shards and crumbs. Don’t make them too fine, as you want a crunch still.
- Take another mixing bowl and add in the butter, sugar, egg and vanilla extract, stirring to combine it all together well.
- Add in the cone crumbs/shards and stir again before adding in just enough milk to make a thick spoonable batter. If you are using the strawberries or white chocolate chunks, you can add them in here too.
- Once ready, take your lined tin and spread the mixture evenly into it. Level the top as best you can before placing it into the oven for around 20 minutes or until the edges are caramelized and chewy with a soft cookie dough like middle.
- As soon as the bake is done, remove from the oven and top with a little extra crumble from another cone if you want to. Otherwise, tuck right in with a good dollop of iconic Irish ice cream on top!
Using super simple ingredients, hardly any tools to wash up with and a whole host of the best Irish ingredients, this is a good old fashioned Dublin inspired dessert that will have you thinking you are in Temple Bar with a good pint of Guinness, having the Irish sun wash over you through the window, in no time at all! Oh get me back there ASAP!
