Celebrate National Biscuit Day With This Jam Filled Recipe
00:00:00Today marks National Biscuit Day in the UK and that calls for a good old cup of tea and a biscuit to dunk in it! As a country, we love the iconic classic! I am talking Rich Tea’s, Custard Creams and the ultimate kind... the Hobnob! However, we also love a jammy sort too, which was what inspired this delicious apricot filled recipe!

Growing up, I would often race home from primary school, which was only about five houses away, as I knew my mum would have made me a cup of tea and had the biscuit tin out on the side. Sitting together, we would dive into it, as we had our afternoon catch ups on the sofa about our days.
Biscuits are a food that can be brought out at any occasion and everyone will find one to enjoy. You can walk about with a biscuit. Cry over a biscuit. Laugh and smile with one too. They are simply the food that is fit for all no matter what. So, when I heard that today is National Biscuit Day, I had to celebrate them.
To me, there is no better kind than a Hobnob, however, I am a big fan of a Jam ‘n’ Cream too! Inspired by the fruity mixture, I have a new recipe to share with you all that blends the nostalgic creamy tastes of a simple biscuit with the wonders of apricot jam to bring together the best of old and new. Pop the kettle on, as you will be dunking these in no time…
Ingredients
150g of Softened Butter
90g of Sugar
One Teaspoon of Vanilla Extra
200g of Plain Flour
One Tablespoon of Cornflour
Apricot Jam (Enough For A Teaspoon On Each Biscuit)
80g of Icing Sugar
One to Two Tablespoons of Hot Water
OPTIONAL: A Drop of Lemon Juice (For Extra Zing)

A Baking Tray
A Mixing Bowl
Two Mixing Spoons
A Small Bowl
A Rolling Pin
A Medium Biscuit Cutter
A Small Biscuit Cutter
A Teaspoon
Method
- Start by preheating your oven to 180ºC, before lining a baking tray with baking paper. Place to one side.
- Next, grab a mixing bowl and add in the butter and sugar. Stir until pale and fluffy then add in the vanilla extract and flour. Mix until a soft dough forms.
- Place the dough into your fridge for 20 to 30 minutes to help make a neat biscuit shape.
- Once the dough is ready, remove from the fridge and use a rolling pin to roll it out to a 5mm thickness. Then, use your favourite cutter to create an equal amount of shapes.
- Halve the amount of shapes you have made and in one half use a smaller cutter to make a circle in the centre of each one.
- Place onto the baking tray and put into the oven to bake for 10 to 12 minutes. Once golden and ready, remove from the oven and allow to cool completely on the tray.
- When the biscuits are cool enough, take the ones without the holes and add a thick layer of apricot jam all over them. Use the back of a spoon to help you spread it.
- After applying the jam to all of them, take the remaining biscuits, with the holes cut out, and place them on top to create a window effect.
- Finally, take a small bowl and add in the icing sugar and water, stirring to make a glaze. Carefully drizzle it over the top to make a shiny effect.
- Allow the glaze to set for a little while before tucking in to these little pieces of sunshine!
Apricot Jam is the best kind for me and these biscuits are so simple but fun to include it in! They look like pure rays of joy that will suit any afternoon tea, birthday party or simple catch up no matter what time of the year it is! You simply can’t beat a good biscuit and these are truly delicious lovelies!
