With the date having been in my calendar for months, I have been eager to get the celebrations started! Something that the wonders at Strong Roots have agreed with me on as they have made the ultimate fibre filled foods to help us celebrate!

Tonight marks the biggest night for dancing, singing and madness in our calendars, as Eurovision is upon us! If you are like me, then you will be having a massive party at home, celebrating the countries and what they are sharing with us, as they bring complete and utter joy into our lives!
When hosting any kind of party, there is a little bit of stress though. Like abiding to the rules of the competition, you have to make sure that every piece of the party costume is sorted before taking to the stage. This includes ensuring that the food out at the party is the best it can be.
Often, many Eurovision parties will be made up of dishes that are inspired by the places the entrants are from. All of which leading to a really delicious mixture. Yet, those dishes can lack a key nutrient that we all need. One that is simple to feature and that is…Fibre!
Thankfully, knowing how vital this is to us, the magicians at Strong Roots have come up with a fantastic dish that packs in 13.25g of the stuff and is great to share at your big party this evening.
Using the Strong Roots Sweet Potato Fries, which has 4.1g of fibre and tons of protein within a 100g serving of them, this nacho-inspired loaded sweet potatoes sharing dish, has been created and encouraged by nutritionist and fibre expert Kirsten Stavridis, making it the ultimate fibre filled party food. Ingredients
One Bag of Strong Roots Sweet Potato Fries
½ of A Large Avocado
25g of Finely Chopped Red Onion
One Tablespoon of Sour Cream
Juice From ½ A Fresh Lime
6g of Fresh Coriander
60g of Chopped Tomato
Salt & Pepper
OPTIONAL: Chilli Flakes or More Chopped Coriander To Garnish

Method
- To start, take half the coriander leaves and chop finely, before popping them into a bowl. Add the chopped tomatoes, half the chopped red onion and the salt and pepper. Mix and place to one side.
- Next, put the sweet potato fries into your air fryer for 12 minutes or oven for 20 minutes at 200°C and allow them to cook.
- Whilst the fries cook, take another mixing bowl and add the avocado to it. Using a fork, mash well, before adding in the remaining coriander (chopped), the juice from the lime and some more salt and pepper. Mix and place to one side.
- When the chips are ready, remove from the air fryer or oven and place into a large sharing bowl. Top first, all over, with the guacamole, then add the tomato salsa and sour cream on top. You can also garnish with some chilli flakes or more coriander here if you want to.
- Once complete, place it onto your party table and enjoy!
These sweet potato fries may not be the normal kind of Eurovision party food, however, I promise that when your guests see them on the table, they will not be able to help themselves! Honestly, you may need to make extra, as they will go quickly! All whilst providing a huge amount of fibre to those eating them, all thanks to the geniuses at Strong Roots!
