One ½ Teaspoons of Onion Powder
One ½ Teaspoons of Garlic Powder
½ Teaspoon of Cayenne Pepper
One Teaspoon of Salt
Rapeseed/Vegetable Oil
Curry Sauce Ingredients

One Whole Head of Thinly Sliced Garlic
Two ½ Tablespoons of Curry Powder
600ml of Vegetable Stock
40g of Butter
One to Two Tablespoons of Lime Juice
½ Teaspoon of Lime Zest
Tools
A Mixing Spoon
An Airtight Container
Two Frying Pans
A Spatula
Three Mixing Spoons
Three Mixing Bowls
A Plate or Bowl
A Chopping Board
A Knife
A Blender
A Tablespoon
Methods
Start by adding all the spice bag ingredients into an airtight container and mix until fully combined. Place the lid on top and set aside.
Next, grab a knife and chopping board and cut the tofu into bite sized pieces before popping it into a bowl with the light soy sauce to soak for 15 to 20 minutes.
Whilst the tofu soaks, grab another bowl and add the flour and spices to create a seasoned mixture.
Once ready, drain the tofu and place into the flour mixture. Coat evenly until fully covered.
In a frying pan, add the oil and allow to heat up for a few moments before adding the tofu and frying until it is golden and crisp. Remove when ready and set aside.
As the tofu cools, place your fries into the oven at 180°C and cook for 20-22 minutes or
air fry at 180°C for 10-12 minutes. Then place the white onions and sliced garlic into the frying pan, adding more oil or butter if needed.
Saute for a few moments before adding in the curry powder, allowing it to cook for a second before adding the vegetable stock. Stir and then remove from the hob to allow it to cool.
When the mixture is cool enough, blend the sauce until smooth, before popping in more butter, lime zest and the juice. Pour into a jug to be used later.
In a clean frying pan, add the garlic infused oil before popping in the peppers and onions and saute until golden. Then add in the garlic and fry for a few extra minutes.
Once cooked, remove from the stove and add a pinch of the spice bag seasoning.
After everything has finished cooking, add the fries, tofu and vegetables together in a bowl, with one to two extra tablespoons of the spice mix, depending on how hot you want your spice bag.
Pop everything onto a plate or into a bowl to serve, before pouring the curry sauce over the top, placing a little extra in another bowl for extra dipping. Then dig in and enjoy!
It might seem like there are a lot of ingredients, but once you get into the swing of it, this spice bag is so simple and full of goodness! Strong Roots know how important getting more of our vegetables are, without stopping the party to enjoy them. This Irish inspired dish is delicious and both the company and Robin should be very proud of it! Grab a pint of Guinness and tuck in ASAP lovelies!
