This year, I have decided to move on from my traditional mega pancake recipe to provide you with a sweet dinner recipe that mixes pancakes with a classic Italian dish! Forks and frying pans at the ready for this one lovelies as its absolutely delicious!

Okay, so I need to know, how many pancakes have you already today? One? Two? Ten? However many it is, I hope that you have been enjoying them lovelies, as they deserve to be in every way on Pancake Day.
Normally, I like to mark the day on the blog by sharing my version of the Uncle Buck giant pancake. However, this year, I am mixing my Italian heritage with the classic sweet delight we all know and love to give you a recipe that makes eating pancakes for dinner totally acceptable. Not that it wasn’t in the first place!
Get those mixing bowls, spoons and plates ready to enjoy this sweet lemon and apple flavoured pancake lasagne, which may just rival the traditional kind…
Ingredients
One Cup of Plain Flour
Two Eggs
One Cup of Milk
A Pinch of Salt
Three to Four Apples
Three Tablespoons of Butter
Three Tablespoons of Sugar
The Zest and Juice of One Lemon
Extra Butter/Oil (For Frying)
Tools
A Mixing Bowl
A Whisk
A Ladle
Two Frying Pans
A Mixing Spoon
A Knife
A Chopping Board
A Small Baking Dish or Extra Frying Pan
A Spatula
A Plate
Method
Start by adding the flour, eggs, milk and salt into a mixing bowl and whisking until well combined.
In a frying pan, melt the butter or oil, over a medium heat, until it coats the base of the pan.
Add in the mixture using the ladle and move around the pan to make thin crepe style pancakes. Place the cooked ones onto a plate using your spatula and keep going until all the batter has been used. Place to one side when done.
Next, grab a chopping board and sharp knife to peen and slice the apples thinly.
In a clean frying pan, add the apples, butter and sugar, before cooking over a medium heat for 10-12 minutes until soft and jam textured. When cooked, add in the lemon zest and juice.
Using a knob of the extra butter, coat the base of a small oven dish or frying pan. Add a pancake into it before adding a thin layer of the apples on top. Sprinkle the apples with a light dusting of sugar and a few extra drops of the lemon juice.
Keep doing this until all the pancakes and apple mixture have been used up, with a pancake being on top, which should be brushed with melted butter and an extra sugar sprinkle.
Once ready, place under a grill or in the oven for five minutes to crisp the sugar and to warm through.
Serve up with a big dollop of cream or ice cream to complete this wonder dish!
