Valentine’s Day is tomorrow and with it comes endless amounts of declarations! Yet, I think the best way to show someone you love them is to share your devotion to them in simple ways. Such as cooking them a meal that they will love!
Using only a few ingredients, this creamy garlic chicken and mushroom risotto style pasta, will have you not only proclaiming your love for one another but also for the dish. It is time to spread your devotions to both the one you are enraptured with and this delightful recipe…
Ingredients
Two Boneless Chicken Breasts
170g of Fettuccine/Tagliatelle Pasta
One Cup of Heavy Cream
One Cup of Sliced Mushrooms
Two Cloves of Minced Garlic
½ Cup of Fresh Grated Parmesan Cheese
Two Tablespoons of Butter
One Teaspoon of Italian Seasoning/Mixed Herbs
Salt and Pepper To Taste

A Medium Saucepan
A Mixing Spoon
A Sieve
A Frying Pan
A Mixing Bowl
Two Plates
A Knife
A Chopping Board
Method
Start by adding the pasta to a saucepan and cooking until soft. Remove from the hob and drain, using the sieve, keeping ¼ cup of the pasta water for later, before placing the saucepan to one side.
In a mixing bowl, add the chicken, salt, pepper and Italian seasoning/mixed herbs to it and stir together until the chicken is well seasoned.
Grabbing a frying pan, add one tablespoon of butter to it and melt on a medium heat. Add in the chicken and cook until all is cooked throughout and golden on either side. Once ready, remove the chicken from the frying pan and place to one side.
In the same frying pan, add in the remaining butter and saute the garlic for 30 seconds before adding in the mushrooms. Cook for a further three to four minutes or until golden.
Pour the heavy cream in with the mushrooms and stir before adding in the cheese. Allow them to simmer for one to two minutes until the mixture slightly thickens.
Add in the pasta and add a little of the pasta water, only if needed, to get a silky consistency. When ready, place the pasta mixture onto your plates.
Using a knife, slice the cooked chicken diagonally and lay on top of the pasta on the plates. Pour over any remaining sauce to coat before serving.
