00:00:00

Christmas is all about sugar and spice and everything nice! Including gingerbread! Whether it be traditional gingerbread men or a big cake like loaf that ends up covered in custard or butter, the possibilities on how to enjoy it are endless! Today, I have an original tart recipe to share with you all that features the festive icon in a whole new form!

Good Morning Lovelies,

Gingerbread is something that we all love in our house. From the iconic biscuits to treacle covered cakes that we slather in butter, we have always got something ginger based in our cupboards. And more so than ever at Christmas!

Today, I have a new take on the icon however, as I have mixed things up a bit by combining it with another great pudding. The humble custard tart.

Get ready to spice up your life and embrace a new dessert that is perfect for the Christmas table and beyond with this exciting and super simple recipe…

Ingredients

190g of Plain Four

50g of Brown Sugar

One and a ½ Teaspoons of Ground Ginger

½ Teaspoon of Cinnamon

115g of Melted Butter

Two Tablespoons of Golden Syrup

375ml of Ready Made or Instant Custard

One Teaspoon of Mixed Spice

Tools

Two Mixing Bowls

Two Mixing Spoons

9-Inch Tart Tin

A Measuring Jug

Method

  1. Start by preheating your oven to 180°C.
  2. In a mixing bowl, add in your flour, brown sugar, ginger and cinnamon and mix until combined.
  3. Add in your melted butter and golden syrup before mixing again to form a soft dough. (You can use your hands if it is easier to do this.)
  4. When your dough has formed, press it, don’t roll, evenly into the tart tin to cover the entire surface.
  5. Place into the oven and bake for 12 to 15 minutes or until firm. Remove once ready and allow to cool completely.
  6. Whilst the pastry is cooling, make your custard or get your custard out of the fridge, and add in your mixed spice. Stir until fully combined.
  7. Once the pastry has cooled, pour the custard into it and return it to the oven for 15 to 20 minutes at 160°C, until the edges are firm but the centre has a slight wobble to it.
  8. When set, allow it to cool completely, before popping it into the fridge to firm up for an hour.
  9. After firming up, dish up a slice of this yummy gingerbread custard tart with some icing sugar sprinkled on top or a squirt of whipped cream, a scoop of ice cream or a drizzle or honey.

The possibilities on how to enjoy this tart are endless lovelies! Any festive way that you can find to enjoy it will bring a real magic into your life this festive season! It's an icon in the making!
