Get Cosy This November With This Sausage Traybake Recipe

With a number of bakes available, I thought before I share my next one that I would give you all a cosy dinner. One that features a whole host of autumn based ingredients! Fresh chestnuts, squashes and ripe apples are all included! It’s truly and utterly delicious!

After a busy day at work, my mum always likes to have a little moan when it comes to coming up with a cosy meal to eat on the cold evenings that November brings! Battling on what will take little time to find in our freezers, she normally sticks to the norm, however, recently she got a bit more excited, as she discovered the world of one tray dinners.
With minimal amounts of mess, few ingredients and super quick cooking times, her meals have become exciting again. Especially when they include so many iconic autumn flavours like this recipe has. In hopes to help you all, I thought I would share a one tray dinner that takes hardly any time at all to whip up.
Perfect on its own or with some mash too, this sausage, chestnut, apple and squash filled dish is a real delight…
Ingredients
Four Sausages (Any Kind Is Fine)
One Apple, Cut Into Wedges
One Red Onion, Cut Into Wedges
One Cup of Uncooked Rice
Two Cups of Chicken or Vegetable Stock
½ Cup of Cooked Chestnuts (Jar, Packet or Fresh Are Fine)
One Teaspoon of Smoked or Plain Paprika
½ Teaspoon of Cinnamon
A Drizzle of Olive Oil
Salt and Pepper, To Taste

A Deep Baking Tray
A Mixing Bowl
A Mixing Spoon
A Measuring Jug
Method
Start by preheating your oven to 200°C before grabbing your baking tray.
In a mixing bowl, add in your butternut squash, onion and apple, before pouring the oil on top and sprinkling the cinnamon, paprika, salt and pepper and tossing together until well coated.
Place onto the baking tray, spreading them out evenly.
Add your sausages onto the tray, nestling them amongst the vegetables.
Once placed, sprinkle the rice onto the tray, avoiding placing it under the sausages.
When everything is laying correctly, pour the stock evenly over the ingredients.
Cover the tray tightly in tin foil and put it into the oven to bake for 25 to 30 minutes.
After the tray has finished cooking for the first time, take it out and remove the foil, then scatter the chestnuts onto the tray and bake for another 15 to 20 minutes.
Before removing it completely, check that the sausages are golden, the rice has absorbed the liquid and everything is soft.
Once it is ready, remove and serve whilst hot!
If you like a sweet dish, this is great with some honey drizzled on top, however, it is also great with a little drizzle of gravy or on its own too! The first bite will instantly make you feel all warm and cosy inside no matter what!
