Using a few kitchen staples, these delicious savoury muffins are a great replacement for sandwiches, whilst being perfect for the whole family to eat! Growing up, I was a school dinners kid. Until I decided that I wanted my mum to make me a packed lunch instead. Something I think came from the fun shopping to find the right lunch box to house it in.
From crisps to wraps, she always tried to make the best meals to fuel my day. Including baking up some real delights. However, they were of the more sweet kind than the recipe I have to share with you to day. Both of which are truly delicious!
Using only a few kitchen staples, these cheesy vegetable muffins are a great sandwich and salad replacement that are both tasty and delicious. The whole family will love these and the change in packed lunch finds will be a real winner too. It’s time to tuck into these tasty to these wonders…
Ingredients
One Cup of Self-Raising Flour
1/2 Cup of Grated Cheddar Cheese
One Cup of Mixed Chopped Vegetables
Two Eggs
1/2 Cup of Milk
Two Tablespoons of Olive Oil
1/2 Teaspoon of Salt and Pepper
Tools
A Muffin Tin
Muffin Paper Cases
Two Mixing Bowls
A Mixing Spoon
A Whisk
Method
- Start by preheating your oven to 180°C or 350°F before greasing and lining a muffin tin.
- In a mixing bowl, add the flour, cheese and veggies together. Stir until combined.
- Using a separate mixing bowl, add in the eggs, milk, oil, salt and pepper, before whisking together.
- Combine the wet and dry ingredients, mixing until just combined, before spooning it into the muffin cases.
- Place the tray into the oven and bake for 20 to 25 minutes or until golden and firm to touch.
- Once ready, remove from the oven and allow to cool completely before eating or placing into a lunch box.
These are so quick and fun to make, plus they take hardly any effort to do. You can change up the ingredients as well lovelies to help suit your tastes! And they are freezable, something that is fantastic if you are short on time during the busy school run in the morning! They truly are the food gift that keeps on giving!
