Tuck Into This Gorgeous Cheesy Irish Colcannon Cakes Recipe This Winter

In our house, we love all things Irish and whilst I am always more than happy to share a good classic stew, I thought I would change things up a bit! Using the best cheeses possible, this recipe gives a really wonderful twist on a truly classic Irish dish!

If you lived in our house during autumn and winter you would be given a bowlful of warming stew at least once a week. My mum is the queen of the slow cooker stew in our family. Topping them with beautiful dumplings and sometimes even a classic cobbler, she just knows what to do with them to make them perfect. Even though we aren’t Irish - I wish we were - she can even ace an Irish stew.
However, this year she has been inspired by another dish she found out on our trip to Dublin in July. Spotted all over the capital, she was in awe of the Colcannon dishes she spotted. So much so that she came back home and changed up the idea of a potato cake with them.
Using the best cheeses she could find, she added caramelised onions to rich fluffy potatoes and create these delicious cheddar and caramelised onion Colcannon cakes…
Ingredients
900g Potatoes
One Small Shredded Savoy Cabbage
One Large Sliced Onion
Two Tablespoons of Butter (Plus More For Frying)
One Tablespoon of Olive Oil
One Cup of Grated Mature Cheddar Cheese
Salt & Pepper To Taste
Tools
A Vegetable Peeler
A Knife
Two Saucepans
A Potato Masher
A Mixing Spoon
A Frying Pan or Skillet
Method
- Start by peeling, chopping and boiling the potatoes until soft. Then drain and mash with a knob of the butter, salt and pepper.
- In a frying pan or skillet, add in some butter and the olive oil before adding in the onions. Cook them on low, stirring throughout, until golden and soft.
- Whilst the onions cook, boil the cabbage in a saucepan until soft. Then add into the mash potato.
- Stir until combined before adding in the caramelised onions and cheese. Make sure to give it a little taste to see if it needs more seasoning.
- Once ready, take a handful of the mixture and shape it into patties/cakes.
- Grabbing your frying pan, add in some butter before frying the cakes on each side until golden and crisp.
- Serve up and enjoy!
These are absolutely lovely alongside any warming winter dish lovelies and so easy to do! They even go well alongside a good old Irish stew!
