The Fourth of July is often celebrated with apple pie and BBQ dishes, however, I have a recipe for you that is a little different but will make everyone happy! Mixing a classic British bake with the colours of the USA, these little bites are truly delicious! You will be making them for every celebration from now on, they are absolutely, 100%, tasty!

Happy Fourth of July! As the years go on, more and more of us around the world are joining in the fun celebrations that the US has long been sharing. From firework displays to classic apple pie delights, there are many qualities to the event that we love! 


Today, I thought I would mark the celebrations with a recipe that mixes a classic British dish with the colours and tastes of the US! These red, white and blue Victoria sponge bites are a real delight that can be adapted for every celebration. It’s time to get baking lovelies…


Ingredients

125g of Self-Raising Flour

125g of Butter

125g of Caster Sugar

Two Medium Eggs

100ml of Double Cream

Sliced Fresh Strawberries 

Fresh Blueberries


Tools

A Cupcake Tray

Cupcake Paper Cases

Two Mixing Bowls

A Whisk

A Mixing Spoon

A Knife

A Cooling Rack


Methods

  1. Start by preheating your oven to 180°C/350°F before lining a cupcake tray with paper cases. 
  2. Taking your mixing bowl, add in the butter and sugar, creaking them together until light and fluffy. 
  3. Add in the eggs, one at a time and mix, before folding in the flour. 
  4. When the mixture is ready, spoon it evenly into each cupcake case before placing into the oven. 
  5. Bake for 12 to 15 minutes or until golden and springy, before removing from the oven to cool on a wire rack. 
  6. Whilst the cakes cool, take another mixing bowl and whip the cream until soft peaks form.
  7. When the cakes have cooled, remove the paper cases and slice each one in half, like a sandwich. 
  8. Place the whipped cream, a slice of strawberry and a blueberry into the middle before popping the top back on like a lid. 
  9. Finish the cake with a dot of cream on the lid with a berry placed on top! Then hand out and enjoy!
