Let’s Bring Back The Arctic Roll With This Easy Recipe

What pudding always makes you think of your old school days? For me, it has to be that Christmas dinner serving of Arctic Roll with strawberry jelly! This classic is a staple for so many, yet, it has sadly been disappearing! Until now! Get ready to tuck in to one again with this easy recipe that can be enjoyed now or at Christmas!

In the UK, when it came to a big celebration, the Arctic Roll would be brought out! Whether with jelly or not, it was a staple. However, recently, I’ve heard a lot of people stating that they can’t find it anymore and I think this is a disgrace. 


I’ve decided that things need to change before it dies out and so I have come up with a super easy homemade version! Get ready to roll away any troubles with this delicious recipe lovelies…


Ingredients

Three Eggs

75g Sugar

75g Plain Flour

One Teaspoon of Vanilla Extract

500ml of Softened Vanilla Ice Cream

Two Tablespoons of Strawberry Jam


Tools

Cling Film

A Baking Tray

Baking Paper

A Mixing Bowl

A Mixing Spoon

A Tea Towel

A Knife (For Spreading)


Methods 

First, take your softened ice cream and shape it into a log on a piece of cling film. 

Place into the freezer and allow to freeze for two hours. 

To make the sponge, preheat the oven to 200°C/400°F and line a baking tray with baking paper. 

In a mixing bowl, add the eggs, sugar and vanilla, stirring together until thick and pale. Then, fold in the flour. 

When the mixture is ready, pour onto the tray and place into the oven to bake for eight to ten minutes or until golden. 

Upon removing the sponge, tip it whilst hot onto a sugared tea towel. 

Peel off the baking paper and roll the sponge up with the tea towel. Then leave to cool.

When the ice cream is ready, unroll the sponge and spread on the jam. Then place the ice cream, log at one end and roll up again. 

Rewrap the roll in cling film and free again for one hour. Once set, slice up and enjoy!
