Summer is here and that means that the best of the best summer fruits are ripe and ready to be enjoyed! Today, I have an exciting recipe for you to enjoy that will have you dreaming about tropical beaches upon the first bite! It’s an Eton mess with a real fruity difference that is truly perfect! Good Morning Lovelies, 


Wherever you may be, the idea of kicking back on a tropical beaches is dreamy right? Even if you live right next to one! However, often it isn’t as easy as booking a holiday there to enjoy it! That is why I have decided to come up with the next best thing to transport us to sunnier climates! 


In the UK, you can’t enjoy a true British summer without an Eton mess. Fresh cream, the best berries and meringue are a trio that can’t be beat. Yet, I have chanced it and made a few edits to the normal recipes we all follow by adding in some tropical fruits that blow this dessert away. 


Get the Pimm’s out, sit back on your sun lounger and soak in the warm weather with a bowl full of this delicious delight…


Ingredients 

200ml of Double Cream

One Tablespoon of Icing Sugar

The Pulp of Two Passion Fruits

One Teaspoon of Vanilla Extract 

Two Meringue Nests

100g of Chopped Fresh Pineapple or Mango


Tools

A Mixing Bowl

A Whisk

A Mixing Spoon

Serving Bowls and Spoons


Method

Taking your mixing bowl, add in the cream and whip together the cream, icing sugar and vanilla extract until soft peaks form. 

Gently fold in the passionfruit and pineapple or mango before crumbling in the meringue nests. 

Fold and mix everything together then spoon into bowls, topping each one off with a little more fruit. 

Tuck in and enjoy lovelies!


Super easy and truly yummy, this can be made so quickly that you can leave it until the last minute at any event or on any day! Cheers to that lovelies!
