In just a few days, it will be my mum’s birthday! And I can’t wait to celebrate! This year, I wanted to share to crack out a cake that she will not be expecting! Risking my actual life to make it, this birthday cake is summer in a sponge! Get ready to create the ultimate peach feast with this super easy fruity recipe!

Good Morning Lovelies, 


Since we were young, my mum has always made sure that there is a cake of some form to mark our birthdays. From homemade creations to LEGO figures, she has come up with the most impressive ways to make us happy. 


There so, to mark her birthday, I have decided to risk my life (quite literally, as I have a peach recipe!), to make her a cake with a difference. Normally choosing a coffee and walnut one, I have gone with a summer smash this year. A peach melba one to be exact! It’s time to get birthday baking…


Ingredients

180g of Plain Flour

One Teaspoon of Baking Powder

One Teaspoon of Baking Soda

100g of Caster Sugar

One Tablespoon of Lemon Juice

One Teaspoon of Vanilla Extract

240ml of Milk (Any Kind Is Fine)

One Sliced Fresh Peach or A Can of Peach Slices (Drained)

Two Tablespoons of Raspberry Jam

One Teaspoon of Icing Sugar


Tools

A Small Cake Tin

A Mixing Bowl

A Mixing Spoon

A Cup or Mug

A Knife


Method

  1. Start by preheating your oven to 180°C before l greasing and lining your cake tin. Place to one side until later. 
  2. Taking your mixing bowl, add in the flour, baking powder and soda and sugar. Mix together. 
  3. In a cup, add the milk and lemon juice together and leave it to sit for two minutes. 
  4. Once the milk is ready, pour it into the dry ingredients, along with the vanilla extract, and stir until smooth and well combined. 
  5. Pour the mixture into your baking tin and swirl the raspberry jam on the top of it with a knife before arranging the peach slices on top. They may sink when baking but that is fine.
  6. Place into the oven and bake for 25 to 30 minutes until golden and springy to touch. 
  7. When ready, remove from the oven and allow to cool in the tin before dusting it with icing sugar. 

Enjoy this delicious birthday cake with ice cream, cream, custard and on its own lovelies! Just remember to add some super fancy candles to really make it pop when you all sing to that special someone!
