Forget Iced Coffee, It Is Time For Coffee Cookies With My Recipe

Yesterday, my mum marked her birthday and to celebrate the day, I went a little bit wild with cakes and bakes! Including these Subway style cookies that were coffee flavoured! Perfect for when you need that coffee hit but the weather is too hot and an iced one just isn’t hitting the spot! Get ready to get baking and dunking with this recipe!

Good Morning Lovelies, 


My mum is the biggest fan of coffee that I know. Before she leaves the house for work, she has to have at least three cups. Followed by more throughout the day. Her favourite kind of cake is a coffee and walnut one and one of her favourite smells is fresh coffee beans. 


Therefore, to mark her birthday yesterday, I went a little bit wild and made her some cookies including her beloved coffee. Made to be just like the ones in Subway, these give that caffeine boost in the most delicious way. Get ready to dunk these delicious wonders for years to come…


Ingredients

One Cup of Plain Flour

1/2 Teaspoon of Baking Soda

1/4 Cup of Softened Butter

1/3 Cup of Granulated Sugar

1/3 Cup of Light Brown Sugar 

One Large Egg

1/4 Teaspoon of Salt

One Teaspoon of Vanilla Extract 

Two Tablespoons of Instant Coffee, Dissolved in One Tablespoon of Hot Water

A Large Baking Tray

Baking Paper

A Whisk

A Small Mixing Bowl

A Large Mixing Bowl

A Mixing Spoon

A Tablespoon


Method

  1. Start by preheating your oven to 350°F/175°C before lining a baking tray with baking paper. 
  2. Using a small mixing spoon, whisk together the flour, baking soda and salt together. 
  3. In another bowl, mix the butter and both sugars together until light and fluffy. Add in the coffee, egg and vanilla extract and beat until well combined. 
  4. Add the dry ingredients into the wet and mix together. This should form a dough. 
  5. Using a tablespoon, take two scoops for each cookie and shape into a round cookie shape. Place onto the baking tray, leaving a good amount of space between each one. 
  6. Pop into the oven and bake for 10-12 minutes or until the edges are set but the middles are soft. 
  7. Allow the cookies to cool on the baking tray for five minutes before storing or enjoying! 

The five minutes it takes for them to cool down is the perfect amount of time to pop the kettle on and make a gorgeous coffee to dunk them in! Or to grab a refreshing glass of milk to try them with! It would be rude not to after all!
