Enjoy An Italian Summer With This Lemon Biscotti Recipe

In our house, Italian food is the greatest there is! Especially when it comes to the bakery and dessert selections that the country offers to us all! Therefore, I thought it would be nice to create something inspired by my dad’s homeland Sicily! Get those juice lemons at the ready for this delicious Italian delicacy that goes well with coffee, gelato and more!

Sicily is a place that runs in my blood! As soon as I see anything featuring it, I have to have it. Whether it be a piece of clothing or a home decor item. I am obsessed with anything to do with it thanks to my dad who was from there. 


With the sun shining down on us lovelies, I thought I would share with you all a super easy recipe, using only four ingredients, which is inspired by my dad’s homeland and the vineyards my grandparents had. 


You won’t be able to stop making these delicious lemon biscotti’s all summer lovelies…


Ingredients

One Cup of Plain Flour

1/3 Cup of Granulated Sugar

One to One 1/2 Teaspoons of Lemon Extract

Three Tablespoons of Skimmed Milk


Tools

A Baking Tray

Greaseproof Paper

A Mixing Bowl

A Mixing Spoon

A Knife


Method

  • Start by preheating your oven to 170°C/340°F before lining a baking tray with greaseproof paper. Leave to one side. 
  • Taking your mixing bowl, add in the flour and sugar and stir together. 
  • Once mixed, add in the lemon extract and skimmed milk (add more if needed). Mix together until a soft sticky dough forms. 
  • Using your hands, shape the dough into a flat log, around one inch high.
  • Place onto your baking tray and place into your oven for around 15 to 18 minutes or until firm and lightly golden. 
  • When ready, take out of the oven and allow for it to cool for 10 minutes. Then slice into 1/2 inch pieces using a knife.
  • Pop the slices back onto the baking tray and place back into the oven for a further 10 minutes to allow them to go crispy. 
  • Remove when done lovelies and enjoy! 

You will only need to make a good Italian coffee now to enjoy these at their best lovelies! In fact, a good Italian ice cream would be even better! Summer has officially arrived!
