With Pancake Day over and Mother’s Day on its way, many of us are actually looking ahead and into Spring! Especially when it comes to spending time in the kitchen! Perfect to enjoy yourself at Easter or to give as a gift, this fudge recipe will bring the sunshine inside instantly! I can’t wait to see all of your festive versions of it!

Easter is the sunniest holiday of them all! You can’t help but smile when you see the sun in the sky, new born animals on the ground and the endless amounts of pastel colours and beautiful flowers surrounding us. 


There so,I thought I would share with you all a fun recipe that is perfect throughout spring, especially at Easter, to enjoy yourself or to give to your nearest and dearest. You can’t help but even make a batch of it for Mother’s Day. 


Get those spoons at the ready for this delicious, citrusy, fudge recipe that is truly delicious in every way…


Ingredients

400g of White Chocolate (Broken Into Pieces)

Zest of One Lemon

Two Tablespoons of Lemon Juice

200g of Sweetened Condensed Milk

A Bag of Mini Eggs


Tools

A Large Heatproof Mixing Bowl

A Mixing Spoon

A Saucepan

A 8x8 Baking Dish

Greaseproof Paper


Method

  1. To start, place the white chocolate pieces and the condensed milk together in a heatproof bowl. Carefully, put the bowl over a boiling saucepan of water or place into the microwave and heat in short spurts until full melted together. 
  2. When fully melted, remove from the heat and add in the lemon zest and juice. Stir together until smooth and fully combined. 
  3. Place the mixture to one side whilst getting your baking dish. Line the bottom of the dish with greaseproof paper before pouring the mixture into it. Smooth over the top with the back of your spoon.
  4. Once smooth, press the Mini Eggs into the top of the mixture before placing in the fridge. 
  5. Allow the mixture to chill in the fridge for at least two to three hours. It may be better to leave it a little longer for a firmer fudge. 
  6. When it is fully set, slice the fudge into squares and enjoy!

Honestly, Easter has never tasted soooo good lovelies!
