Winter is the perfect time to break out the classic stew recipes! However, sometimes they can take forever to do, as they includes tons of ingredients and steps! Yet, they don’t have to! Follow this very easy four ingredient slow cooker recipe to make a vegetarian delight for the whole family! You won’t be able to stop eating  a lot of it!

As we prepare to head into February, the days are getting lighter and lasting longer, yet it doesn’t mean we are out of the chilly darkness just yet! February can bring even colder days at times, however, as the month of love it is also time to embrace some heartwarming recipes that feel like a huge hug. 


Annoying, hard to follow recipes, have never been a thing I have wanted to focus on the blog. I’ve always shared easy pieces that take hardly any time, effort or ingredients to do. Including this one for a slow cooker stew that only needs four ingredients to make a perfect partner dish for rice or potatoes for all diners.


Prepare this in a matter of minutes lovelies for a gorgeous dish that won’t last long…


Ingredients

Two Cups of Diced Courgettes

One Can (400g) of Chopped Tomatoes 

One Cup of Diced Peppers

One Teaspoon of Mixed Herbs


Tools

Slow Cooker

Wooden Spoon

Kitchen Knife

Chopping Board


Method

Start by dicing all your vegetables into small to medium sized shapes. Once ready, place all of them into your slow cooker. 

Using a wooden spoon, stir the recipe to make sure everything is mixed evenly. 

Pop the lid on the slow cooker and turn it on low to cook for six to seven hours or on high to cook in three to for hours. 

Halfway through give the stew a stir, tasting to see if it is okay, before adding in any further seasonings you may want to or leaving to cook. 

Once ready, serve with some warm buttered bread, rice or creamy mash potato for the best winter stew.
