Did you know that 17.2 million sprouts go in the bin at Christmas? I know! It’s a disgrace,as they are actually delicious! It shocked me to very core to hear how high this number was, so I wanted to take some action! And thankfully lots of people want to do the same too, including Opies!
Having taken out their own research into how much we waste at Christmas, the famous brand are taking action, coming up with innovative recipes that are super easy and delicious to help use up all our leftovers.
Kindly, the team gifted me a number of their items to put some of these recipes to the test, including their Pickled Walnuts, Cocktail Cherries, Mini Silverskin Pickled Onions and the fantastic Mini Gherkins. All of which may seem small but they are certainly mighty when it comes to changing up the classics.
With 68% of us admitting to buying too much food at Christmas, Opies have shared these fantastic ideas, which I wanted to share with you too! Get the jars out and prepare to tuck in to these delights…
Leftover Turkey Quesadilla – this clever recipe totally transforms any turkey whilst using up the zingy cranberry sauce. The complementing oozing cheesy creaminess and pop of savoury crunch from onions and gherkins makes this the most moreish Christmas dish that all the family will enjoy.
Turkey, Ham & Vegetable Gratin – perfect for a tasty Twixmas lunch or simple supper. This recipe uses up an array of items from turkey to glazed ham and any vegetables left lurking in the fridge. You could even pop in some of the pickled walnuts to elevate this even more.
Root Vegetable Gratin – this recipe calls for all the root veggies that you have be it potatoes, carrots, celeriac, parsnips, sweet potato, turnips, beetroot or fennel. Perfect with cold cuts or as a hearty veggie-friendly dish that is undeniably winter on a plate. This is an excellent make-ahead and can be prepared and frozen up to a month beforehand. Again the walnuts or gherkins would be fabulous with this dish.
Pigs in Blankets Mac n Cheese – as an estimated 7.1million pigs in blankets go in the bin each year, it’s important to find an easy way to rescue the piggies from the dump. Pickled walnut studded breadcrumbs are a resplendent finish to this family favourite!
Bombay Potato & Sprout Traybake - Uses all kinds of leftovers from roast turkey, roast potatoes and even sprouts! Make it vegan by swapping the turkey for chickpeas. Mini Onions make for a crunchy topping too!
Air Fryer Brie – a clever way to use up Brie that’s coming to the end of its life. On the table in minutes. Serve with salad, warm cranberry sauce, crackers or hunks of bread. Perfect if you’re planning ‘picky bits’ or a ‘picky tea’ and great to go alongside any of the gherkins, walnuts or onions too.
