Blogmas Day 22: Get Baking With This Mince Pie Flapjack Recipe

Good Morning Lovelies, 

Christmas Eve is a day of baking in our house. Me and my mum gather early in the kitchen to ice our Christmas cake, make little sausage rolls and mince pies, as well as gingerbread men and other festive treats. 


Whilst we keep lots for ourselves, we also hand them out to our neighbours as gifts or simply to enjoy during the festivities. Nothing makes me happier than knowing that one of them may be sat, next to their glowing Christmas tree, with a cup of hot chocolate and one of our bakes. 


There so, I thought it was the right time to bring a new recipe to the blog that is easy and quick to make. You will be making this now, on Christmas Eve and throughout the rest of the December, elevating the use of mincemeat to a whole new level. Get ready to enjoy lovelies…


Ingredients

175g of Butter

1 Tbsp of Treacle

250g of Oats (Any Kind!)

100g of Golden Syrup

350g of Mincemeat

100g of Dried Fruit

175g of Light Brown Sugar


Tools

20cm Square Baking Tin

Greaseproof Paper

Mixing Spoon

Large Saucepan

Cooling Rack

Knife


Method

Start by preheating your oven to 180C/160F, before greasing and lining a 20cm square baking tin. Once complete, place to one side. 


Take a large saucepan and add in the syrup, butter, sugar and treacle. Place onto a medium set hob and melt together, stirring throughout. 


When the mixture has melted, remove from the heat and add in the remaining ingredients. Stir until fully combined. 


Carefully pour the mixture into your prepared baking tin and flatten with the back of your spoon. The flapjacks should have a smooth top. 


Bake in the oven for 30 to 35 minutes or until golden on top. When ready remove from the oven and leave to cool in the tin for a further 30 minutes. 


Once the flapjacks have cooled down, carefully remove them from the tin and place onto a cooling rack to cool completely. 


When ready, use a knife to cut into squares and enjoy! These are also great when placed in festive packages to gift to others.
