Summer is all about those cooling recipes! However, it is also the most perfect time to break out the sweetest of puddings! Especially with the amount of berries that are ripening up as we speak! Today, I have a super easy recipe for you all that features an unusual but delicious ingredient! Bowls and spoons at the ready to dig into this one!

Summer is a great time to experiment in the kitchen! If you are like my family, then you will often find yourself struggling to want to cook when the weather is so hot. We have all been known to even turn to cereal in our house at times. However, I have a simple but strange recipe for you now that turns those cereal bowls into something else! 


Using bulgur wheat, a healthy grain that is often overlooked, this sweet delight can be enjoyed as breakfast, lunch or dinner, as well as a dessert, throughout the summer. Capturing the best flavours from the season, it’s a bowl full of difference but delicious delights.

Ingredients

One Cup of Bulgur Wheat

Two Diced Apples (Peeled)

Three Tablespoons of Apricot Jam

1/2 Cup of Multigrain Cereal Shapes (Plus A Little Extra For Topping)

Two Cups of Water


Tools

 A Saucepan (With Lid)

A Mixing Spoon

A Mixing Bowl

A Measuring Cup

A Fork

A Baking Dish


Method

  1. Start by cooking your bulgur wheat. Begin by bringing two cups of ware to the boil, before adding in the bulgur wheat. 
  2. Once added, reduce to the temperature to low and cover, allowing the wheat to simmer for around 12 minutes until it is tender. 
  3. When the bulgur is ready, fluff it up with a fork and place to one side to cool until it is warm. 
  4. Taking a mixing bowl, add the warm bulgur, diced apples and apricot jam together. Stir until well combined. Pour in the cereal and stir to provide an extra bit of crunch. 
  5. After combing it all, spoon the mixture into a baking dish before topping with the extra cereal for a crunchy topping. 
  6. Place into the oven and bake at 350°F/175°C for about 15–20 minutes or until the top is golden and the apples soft. 
  7. Enjoy whilst it is still warm lovelies! You could even add a little bit of ice cream or sugar to sweeten it up even more!
