Good Morning Lovelies,
It is officially baking season! Forget making anything else in the kitchen, it is all about cakes, bakes and hearty sweet treats at this time of year! And I am here for it! I love nothing more than making a big bowl of chunky porridge for dinner and drizzling lots of rich dark honey on top. Who says it has to be vegetables all the time?
With this in mind, I have a recipe to share with you all today that gathers all the best bits of the upcoming autumn season to help us get in the mood for the best time of the year. Grab a mixing bowl lovelies, as you are going to want to make this one right away…
Ingredients
200g of Self-Raising Flour
50g of Plain Flour
150g of Melted Butter, Plus 30g Extra Soft Butter For The Topping
150g of Light Brown Sugar, Plus 40g Extra For The Topping
100g of Greek Yogurt
One Teaspoon of Vanilla Extract
Two Thinly Sliced Apples
150g of Thick Vanilla Custard
Two Eggs
One Teaspoon of Cinnamon, Plus A Pinch More For The Topping
A Pinch of Salt
Tools
A Small Baking Tray
Two Mixing Bowls
Two Mixing Spoons
Method
- Start by preheating your oven to 180ºC, before lining a small baking tray with greaseproof paper.
- Next, grab a mixing bowl and add in the melted butter, the 150g of sugar, the eggs, vanilla extract and yogurt, mixing until fully combined.
- When combined, fold in the self-raising flour, teaspoon of cinnamon and salt. Then pour and spread into the tray.
- Level off the top before using another mixing spoon to place little dollops of custard on top of the batter, before swirling it into the mixture.
- Once the batter is ready, place the apple slices on the top of it. Put the tray to one side.
- In another mixing bowl, add in the remaining butter, the brown sugar and the remaining cinnamon. Use your hands to rub together to make a crumble.
- Scatter the crumble over the top of the batter and place into the oven to bake for 35 to 40 minutes or until golden on top and slightly gooey in the middle.
- Remove from the oven and serve warm, with ice cream, custard or your favourite sauces lovelies!
This recipe merges the best desserts into one making the ultimate taste explosion in your mouth! It is so adaptable to lovelies, as you can mix up the spices to suit the season! I may try to add some ginger nearer to Christmas to give it a real festive feel! For now though, I hope you enjoy this delicious early autumn bake in your favourite cosy space!
